Healthy Grilled Garlicky Potato Wedges without Butter

They are actually good for you since they are not fried. It was a lazy Sunday morning and I did not want to cook lunch for myself. I wanted to have a potato meal but a healthy one. The fun part of cooking for one is you can innovate and experiment with no negative feedback. Since you are the guinea pig you have to eat or go hungry.
I parboil the potatoes so that they are soft and creamy on the inside and crunchy on the outside after they are grilled. Grilling also takes less time this way. I love enhancing food with some flavour, so I added mixed herbs and minced garlic to give them a flavorful punch. I served the Healthy Grilled Garlicky Potato Wedges without Butter in style on the black new platter my friend Kalpana gifted me. The fancy silver fork is my latest treasure from Bhutan.
INGREDIENTS
6 medium-sized potatoes
Salt, pepper to taste
5-6 garlic pods crushed
1 tsp mixed herbs (thyme, basil, oregano)
METHOD
Wash the potatoes thoroughly and parboil in a medium pot. Do not over boil as you want your potato wedges to retain their shape and not crumble. Once done cool and peel the potatoes. Chop into even-sized wedges.
In a bowl take the potatoes and season with salt, pepper, mixed herbs. Crush the garlic and add to the potatoes and toss the seasoning.
I minced the garlic in my hand mortar and pestle and it took just 30 seconds to get a nice creamy paste.
Preheat the grill to medium-high heat for about 10 minutes. Place the potatoes on the grill grates and grill for about 10 minutes per side.
I sprinkled some red chilli powder after removing them from the oven to give that final spicy kick and to satisfy my strong South Indian spicy palate!
I served the Healthy Grilled Garlicky Potato Wedges without Butter with cucumber slices and a heavenly mint-yoghurt dip which enhanced the taste a 1000 fold!

Oh, I make this recipe too but the process is inverse. I first bake them in the microwave them toss them in a pan for the brown crisp texture. Healthy and tasty!

We make potato sabji using Garlic & red chilli and we deep fry the potatoes. This is a good healthier version and the herbs will enhance the taste.
