Egg in a Hole Recipe|With Kale
Instructions
  1. Firstly, take the bread slices and cut out the inside leaving the crust. Keep aside to be used later.
  2. In the meantime, chop up the onions, peppers and mushroom, finely.
  3. Add a tablespoon of butter in a pan over medium-high heat. Once the butter starts to sizzle, toss the onion, mushroom, peppers and sauté them. Add the kale at the end. Keep stirring them with a wooden spoon until they are browned to your desired level.
  4. Add the mixed herbs, salt, pepper and mix well.
  5. Once it’s ready, turn off the heat.
  6. You can make the omelette in the same pan or use another.
  7. Add butter and place the bread crusts on it. Spoon the veggies into the centre of the bread.
  8. Next, crack your eggs in a bowl and give a good whisk. Add a pinch of salt and pepper. Pour the egg mixture over the cooked veggies and into the middle of the bread slice.
  9. Sprinkle the cheese over the egg. Finally, put the sliced out bread on top of the cheese and press it down slightly.
  10. Once the egg is cooked cook, carefully work a spatula under the bread. Flip it over to cook on the other side. The egg should be cooked nicely and fill the bread totally. Once the other side is done, turn off the heat and serve.
  11. Although this recipe uses many of the same ingredients as any regular breakfast, this is a fun way to play with the arrangement. As I revealed before, this recipe is very adaptable and I added a few garlic chives too.
  12. This omelette-in-the-hole version is a fun and easy way of coaxing anybody who is shying away from eating the same old breakfast every day.
