fluffy homemade pancake recipe
  1. in a bowl, sift the flours, baking powder, salt and sugar. make a well in the centre.
  2. take the milk, egg and melted butter and blend mixture until smooth.
  3. now pour this mixture into the well of the flour and fold in mixing into a smooth batter. do not beat the flour.
  4. the egg makes the pancakes light and fluffy.
  5. add a tsp of vanilla extract for heightened flavour.
  6. heat a griddle or frying pan over medium-high heat and spoon a tsp. of butter on it. pour a ladle of the batter onto the griddle, using approximately and let it spread.
  7. flip the pancake after bubbles rise to the surface. brown on both sides.
  8. serve fluffy homemade pancake recipe hot with a drizzle of maple syrup or honey as i did. top with fresh strawberries, banana or grapes

1. you can make pancakes with only wheat flour

2. add pureed fruit for healthier pancakes

3. you can store batter in the fridge for a day or two
