Oreo Dessert with Lemon Curd Recipe
Oreo dessert with Lemon curd is where I made Diyas or lamps with an Oreo dough and filled them with lemon curd while topping them with grated coconut and an almond shown as the wick.
Instructions
  1. Take the Oreo biscuits and with a knife gently lift the cream layer from the centre. Crumble the biscuits with hand or in a blender. I blended both.
  2. With a spoon pour 2 tbsps. Butter, milk and condensed milk on the Oreo powders. Mix nicely until crumbly. Now slowly add a little milk to bind each into a smooth dough. Do not add milk all at once as the Oreo powder is quite pasty.
  3. Once the Oreo dough is ready, take a small ball. Make a smooth ball and shape it into a Diya with your fingers or mould it on a Diya or bowl. After making they keep them in the fridge.
  4. I am sorry I do not have pictures of the lemon curd as I made this in a hurry and the babies wouldn’t let me take pics. While they set make the lemon curd. You can add anything to fill the Diyas; custard, mascarpone cheese, caramel, cream, jam or any fruit cocktail.
  5. In a small pan, blend sugar, lemon juice, lemon zest, and eggs.
  6. Stirring nonstop with a whisk add the butter and cook over low heat.
  7. Keep stirring until the first bubble appears on the top of the mixture and the curd is thick enough to hold the marks of the whisk, about 6-8 minutes.
  8. To separate the zest from the curd, strain the lemon curd through a fine-mesh strainer. Pour the lemon curd into the Oreo Diyas and refrigerate for a couple of hours.
  9. Before serving place an almond half as the wick of the Diya and sprinkle some grated coconut over it. Serve the Oreo Diyas and see the faces light up with joy
  10. Transfer the hot lemon curd to a bowl and cover with a plastic wrap. Refrigerate until cold.
  11. The curd keeps fresh in the refrigerator for about 1 week.
  12. So don’t just light up earthen Diyas but also sweeten everyone’s palate with these melt in mouth edible Diyas.
Recipe Notes

Be very careful while adding milk to the oreo mix as it becomes very stringy.

Make the lemon curd in advance as it keeps fresh for a week in the refrigerator.

Mould the oreo mix with greased palms or on a mould.
