take the greek yoghurt in a bowl and add the fresh cream to it. add the castor sugar and blend both together till creamy consistency.
for the sauce
chop the strawberries and deseed the pomegranate.
take a pan and heat it. add the strawberries and pomegranate to make a thick sauce. keep stirring and add the maple syrup. once thick remove from fire and set aside. leave the pulpy fruit as it is instead of blending it.
for the granola
heat a pan and add the jaggery to it. let it melt nicely and add the roasted nuts to it and mix nicely. grease a bowl and pour the granola into it. let it cool. i used cashew, walnut, almonds, peanuts and melon seeds.
layering
take two ice-cream glasses.
firstly, layer the bottom with the yoghurt mixture.
shake the glass to let the cream settle without any bubbles.
then gently spoon the pulpy sauce to make a fruity layer
now for another layer of the cream.
top the pudding with the crushed granola and garnish with a strawberry.
chill it in the refrigerator for a couple of hours.
your satiny smooth strawberry and pomegranate parfait with crunchy granola on top is ready.

it is a very flexible dessert. you can use cherries or strawberries.
you can use whipped cream instead of greek yoghurt.
