India’s favourite chaat has always enjoyed a special place in street food in the north and now has stormed the traditional South Indian bastion. The crispy round puri stuffed with potato, imli chutney and spicy flavoured water, packs in a punch and bursts into a shower of flavours the moment it enters your mouth. Now purists may be dismayed at this quintessential street food staple in anything but its traditional recipe but the millennial is looking for a change.

So these Cheese Corn Pani Puri Shots is a new avatar of the traditional Pani Puri. Stuffed with minced chicken or Paneer, melted cheese, corn, veggies the panipuri has found many incarnations and Chaat lovers are relishing them. I then added some pizza, tomato sauce and schezwan sauce, and heaps of shredded mozzarella cheese over it.

Ingredients for Cheese Corn Pani Puri Shots

20 Pani Puri

1/2 green capsicum

1 cup American corn

1/2 yellow bell pepper

1 small onion chopped finely

1/2 small red bell pepper

5 garlic pods crushed or chopped

4 tbsp pizza sauce

2 tbsp Schezwan Sauce

1 tbsp Tomato sauce

1/4 cup mozzarella cheese

1 tbsp. olive oil

½ tsp. Chilli flakes

Few Olives

2 Jalapenos- Optional

1 tsp. mixed Italian Herbs

Salt to taste

 Method

Ingredients

In a pan, heat the oil and add the chopped onion and garlic.

Sauté and add the finely chopped capsicum and bell peppers. Add the corn and cook till almost done.

How to make Cheese Pani Puri

Add salt, pizza and schezwan sauce. The mixed herbs and chilli flakes are added now and stirred well. Add half of the grated Mozzarella and mix all the veggies well.

Remove from fire and let cool.

Cheese Corn Pani Puri Shots

Punch the Puris in the centre and fill them with the corn stuffing. Place an olive each on the Puris (optional) to give an authentic Italian touch. Sprinkle the rest of the mozzarella cheese over them.

To get a real crispy and warm taste bake these stuffed Pani Puri Shots in a preheated oven for 5 minutes or till the cheese melts. You can even micro it for 10 seconds on high temp.

Remove from the oven and serve hot. Drizzle with the Tomato, hot and sweet sauce if you like to.
