creamy coconut sandwiches recipe | with healthy greek yoghurt

this creamy coconut sandwiches recipe is healthy, easy, nutritious and so very unique and you will love it. we mainly eat roti or leavened bread made with whole wheat flour in india, but the british left us the legacy of bread (made with refined flour) when they were ruling us. bread is a very versatile food product and can be a part of any meal with a variety of combinations, but a coconut sandwich?  do the english know how to make a creamy, soft, melt-in-your-mouth sandwich with coconuts?   we indians do! i do not know the origins of this recipe but just remember my mom making them and all five of us siblings used to ask for more. i guess i should have asked her.

the coconut is known for its great adaptability as seen in the many uses of its different parts and is found throughout the tropics and subtropics, especially the coastal areas. peninsular india has a long coastline and i am glad i live on the coastline and can have the goodness of coconut in food and oil, as a conditioner for my hair. coconuts are part of the daily diet of people living on the coastline. it is available abundantly and is suited for the humid climate in the coastal belt. there is nothing more delicious than the tender coconut, drink the ambrosial water and then get to slurp in the creamy coconut inside. but, we are taught to believe that coconut is high in fat so we should avoid it.

coconut oil for lustrous hair

coconut oil is very good for the hair too and my lustrous long hair is the result of my mom’s daily coconut oil massages. for best results, use your fingers to gently massage the oil into your hair, after you’ve finished applying the oil, wring a small towel in warm water and wrap it around your hair and allow it to soak in for half an hour and then shampoo your hair. this is the best way to condition your hair and you get the best hair spa.

goodness of coconut

coconuts are high in saturated fat but from a vegetable origin. they are loaded with omega- 3 fatty acids, which protect against heart disease, cancerous activity, diabetes, arthritis, asthma, pms, allergies, water retention, rough or dry skin, and dull hair. along with taste, it is also rich in medium-chain triglyceride fats that improve our metabolism, clear cholesterol from the body and bloodstream, aid in digestion, assist with fighting off bacteria and warding off depression and dementia. eat raw coconut however you choose, i love to snack on the meat from the mature coconut too. coconut is probiotic and we all know that probiotics are very beneficial for the digestive system because they feed the good bacteria in the intestines.

this creamy coconut sandwiches recipe is very easy to make. just fold in shredded fresh coconut in thick yoghurt and grill on a griddle with mustard seeds. amazing creamy coconut sandwiches are as simple as this.

INGREDIENTS:

½ coconut shredded

½ cup hung yoghurt

6 bread slices

1 green chilli chopped

1 tsp chilli sauce (optional)

salt to taste

1 tsp mustard seeds

1 tsp olive oil or ghee

METHOD:

Shredding the coconut

first of all, break the coconut, take half of it and peel the hard shield.

grate it with a grater or as i did, grind it in the hand blender. i usually grate my nails along with the coconut so i refrain from grating it.

i use the hand chopper to do the shredding easily and safely. but do not make it into a paste. it should be cottony soft.

Creamy coconut filling

in a bowl mix the hung yoghurt and the coconut, add salt to taste and a finely chopped green chilli or a spoon of chilli sauce if you like it a little spicy like i do.

now spread a thick layer of this white creamy paste on the bread slice. cover with another slice and cut into triangles. lavishly spread the creamy filling and not a thin layer.

Grilling the Creamy Coconut Sandwiches

heat a griddle and pour a teaspoon of olive oil on it or ghee. once the oil is hot add the mustard seeds and let them splutter.

mustard seeds fly all around when they splutter and can scald the skin, so please be safe.

now place the bread on the griddle and grill both sides. creamy coconut sandwiches recipe is ready to be served.

remove creamy coconut sandwiches onto a serving plate and serve hot with a chutney or a sauce.

i attain foodie nirvana when i bite into the heavenly sandwich and savour the creaminess. i eat them slowly and relish every mouthful.

Notes

  1. You can cut the bread into any shape u like
  2. Serve with any chutney or sauce u like.
  3.  You can grill the bread without the mustard seeds too if you do not like them.
