Pancake or Meetha Pooda
Easy Fluffy Pancakes Recipe at Home is better than any store bought a premix.Pancakes have a long history, dated back to thousands of years and being cooked on stones. Pancakes are prevalent in every culture. A thin flat almost cake-like texture made from batter and cooked on a griddle is almost like our very own meetha pooda. Make Easy Pancakes Recipe at home with the basic batter of eggs, flour, milk and melted butter. Sometimes batter is made from buttermilk just like my mom used to use a little yoghurt in the pooda. Usually, pancakes are drizzled with Maple syrup but you can use honey or any sweetener of your choice.
History of Pancakes
Interestingly the first ready-mix food that was sold commercially was Aunt Jemima pancake flour as far back as in 1889 in St. Joseph, Missouri. Amusingly, in France, if you touch the handle of the frying pan holding a coin in one hand and make a wish while the pancake is turned your wish would be granted. Should I try this?
Pancakes for Breakfast
From making idly-dosa  I am making ham sandwiches, French toast and today I made Pancakes for Arian. The pleasure in making them for my 3-year-old grandson is immeasurable. I told him I was going to make him Mickey Mouse pancakes and he said make me a heart shape too Gma!!
Pancakes are Easy
Baking powder is used for leavening. Different types of flour like wheat can be used as all-purpose flour is said to be unhealthy. Presently most people use wheat flour only if they are making pancakes at home. I like making banana pancakes too but I did not have a blender here to do that. You can add other fruits too. What’s more, the batter can be made in a jiffy with simple ingredients found in every kitchen. The cooking time is also short and can be made like a regular breakfast and not limit it to a special occasion feast.

Easy Fluffy Pancakes Recipe at Home
Ingredients
- 1 1/2 cups all-purpose flour
- 3 1/2 tsp baking powder
- 1 tsp Salt
- 3 tbsps white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tbsps melted butter
- 1 tbsp Honey
- 1 tsp Vanilla extract
Instructions
- In a bowl, sift the flour, baking powder, salt and sugar. Make a well in the centre. Take the milk, egg and melted butter and blend mixture until smooth. Now pour this mixture into the well of the flour and fold in mixing into a smooth batter. Do not beat the flour. The egg makes the pancakes light and fluffy. Add a tsp of Vanilla extract for heightened flavour.
- Heat a griddle or frying pan over medium-high heat and spoon a tsp. of butter on it. Pour a ladle of the batter onto the griddle, using approximately 1 ladle and let it spread. Flip the pancake after bubbles rise to the surface. Brown on both sides.
- I made a few for Karina, my daughter-in-law and then went about making Mickey Mouse and heart shaped ones for the apple of my eye and he just lapped them up.
- Cook on one side and flip them over. I love this pan I bought recently. It is great for uttapams, pancakes and even omelettes.
- Serve hot with a drizzle of maple syrup or honey as I did and a blob of fresh cream.
