How I made Raw Banana Cutlet | Vrat ka Khana

Honestly, I have never made Raw Banana cutlets before and I attempted them with trepidation. But I guess experience with cooking worked for me and they turned out absolutely marvellous. I was adventurous enough to try out different shapes with my cookie cutter. I thought I would have to add Kuttu ka atta as a binder but I didn’t need too. Shall I tell you my secret for that? Well, I cut the bananas into  pieces and didn’t over boil them. I grated the pieces after boiling and peeling and the texture was nice and firm. It was not mushy or sticky and I could easily get them into a fancy heart, star and flower shaped.

Today is Day 2 of Navratri Vrat Recipes. If you are fasting then check out my Vrat recipes Sabudana vada  Kala chana puri sooji halwa, Makhana, Sweet potato, Sabudana khichdi, Banana lassi, Kuttu ki roti, Baby potato fry, Lauki ki kheer.

Cuisine Navratri Vrat Ka khana
Servings 4 persons

Ingredients

  • 250 gms Raw bananas
  • 1 Black cardamom Badi elaichi
  • 2 tsp White rock salt sendha namak
  • 2 tsp Coriander seeds powdered
  • 1/2 tsp Chilli powder
  • 2 tsp lemon juice
  • 1 Green chilli chopped
  • Little fresh Coriander chopped
  • Oil for deep frying or pan fry
  • For dusting Kuttu ka atta optional

Instructions

  • Cut the bananas into 2-inch size pieces. Boil the bananas in just enough water to cover the bananas.
  • Add ginger and 1 black cardamom to the boiling bananas. Once the bananas are cooked but at bite like consistency, remove from fire. It will take 10 to 15 minutes in an open pan.
  • Once cool peel the banana chunks and grate.
  • Add the rest of the ingredients and mix nicely to get a firm dough like consistency.
  • Shape into any shape of your choice, round, cylindrical or take cookie cutters and make fancy shapes like hearts, stars or flowers.
  • Because of grating my mixture was perfect, not mushy or soggy and could be moulded easily. But if your mixture acts up on you then add Kuttu ka atta to bind and dust the cutlets.
  • Heat oil in a pan and deep fry the cutlets till golden and drain on a paper towel. You can even pan fry the cutlets.
  • Fry until golden brown.
  • Serve the Raw Banana cutlets with mint chutney. Enjoy

Notes

Cut the banana into 2-3 inch pieces
Use just enough water that covers the banana and dries up.
Boil banana till it has a little bite in it.
Do not over boil.
Grate the banana after peeling instead of mashing. It is easier to bind.
