Cherry & Coconut Jelly Cups
This is the 10th post for #BlogchatterA2Z 2021 powered by Blogchatter. J for Jelly. Easy Cherry & Coconut Jelly Cups is a kid-friendly dessert as kids love gobbly-wobbly jelly. This dessert is especially for my grandson, Arian. Luscious ripe red Cherries are one of the delights of the summer. They are much loved for their scarlet juicy globules that are succulent, flavourful and look gorgeous. A bowl of cherries, a chilled glass of lemonade, and a good book are delightful on a hot summer day. To serve the family, place rinsed cherries in a platter or bowl and you don’t need any fork or spoon too as each cherry comes with its own handle; the stem. Cherries are members of the same fruit family as apricots, peaches, plums, and almonds. Popular as a dessert fruit and as a garnish for cocktails or mocktails.
Cherries have a healthy side too and offer therapeutic benefits, as they are rich in antioxidants and many other health-promoting compounds. They are Cancer-Preventive and also support healthy sleep.
Cherry & Coconut Jelly Cups
I just chanced upon a small pack of cherries in the supermarket and started popping a few in my mouth while driving home. Felt like making a dessert with them but had no clue what; While rummaging in my pantry, I found coconut agar-agar sheets and used them.
I made some coconut milk with the fresh coconut and added agar-agar to it so that it could set. Then I deseeded the cherries and juiced them, added agar-agar to them and some whole cherries to set them.
Recipe for Easy Cherry & Coconut Jelly Cups
Ingredients
250 gms cherries
10 gms agar-agar sheets
1 cup coconut milk
Sugar to taste
Water 2 cups
Method
Keep a handful of cherries to garnish and add in the juice. Deseed the rest of the cherries and juice them.
Soak the agar-agar sheets in one cup of water for 10 minutes. Then add one more cup of water and boil to make a smooth paste.
Meanwhile, make coconut milk with ½ a coconut. Just blend it in the mixer and add a cup of water. Strain and collect the thick milk in a cup or you can use store-bought coconut milk.
Add half the agar-agar paste to the coconut milk and the rest with the cherry juice. Add sugar if need be.
Take moulds and rinse them once with water. Here you can change the layers as you wish, but I have found that the coconut layer is firm and when you unmould it is good to have a firm base.
Pour a spoonful of cherry jelly and then place a few cherries on it. Cover with another spoon of jelly and set in the fridge for 10 minutes.
Pour a spoon of coconut jelly on the cherry jelly and set it in the refrigerator.
Once set in a couple of hours, unmould and serve these delightful Easy Cherry & Coconut Jelly Cups

Jellies are my kiddo’s favorites; they can have it anytime, anywhere in any form. I liked the recipe for coconut jelly cups. Reading it seems very easy. By next weekend would love to give it a try. Happy B’day to Arian!

My kids are very fond of jellies and I often make blueberry, raspberry, and strawberry flavors too. Cherry is new to me.
