Giving the #BlogchatterA2Z  challenge a kick-start with this absolutely delicious Apple Kheer Recipe| #BlogchatterA2Z. In India, all good things are started by something sweet and that is what I am doing today. Kheer or Rice pudding is a universal favourite but I had to start with the letter A, so I gave the recipe a twist and made Apple Kheer. The regular rice kheer has just got a makeover with the apple fruit. Apple kheer is an ingenious change from the traditional Indian dessert with the crunchy fruitiness of apples, almonds, heady aroma of cardamom, punch from the cinnamon and sweetness from Demerara sugar and the cherry on top is a fat, luscious red grape.

Pricey Apples

An apple a day keeps the doctor away is what we grew up hearing. Apples these days have become so expensive. I picked up two for the kheer at the supermarket and didn’t check the price. I went home and glanced at the bill; It was shocking to see two medium-sized apples for INR 81. Having an apple a day is surely going to burn your pocket.

I make really good kheer but I can never beat the taste of the rice kheer made in the Gurudwara. It is as if it has a divine hand in making it and the taste is always heavenly.

Apple Kheer

Ingredients for Apple Kheer Recipe| #BlogchatterA2Z

1 Apple

 4 Tbsp basmati rice

 6 Tbsp Demerara sugar (you can also use normal castor sugar)

10 almonds slivered

4 cardamoms

1 cinnamon stick

Red Grapes to garnish

Few strands Saffron

Method

Rice pudding or Kheer
Boiled Rice added to Apple Kheer

Wash and soak the rice for 30 minutes. Boil and keep aside.

Apple Saffron Cardamom Kheer

Chop 1 apple into cubes and immerse them in saffron-infused milk.

Boil the apples in milk till apple pieces are soft.

Add the boiled rice.

Once the apple and rice blend and thicken, add the brown sugar, cinnamon stick and crushed cardamoms.

Apple Kheer is ready

Turn down the heat and let the kheer simmer till it is of a nice and thick consistency.

Turn off the flame and transfer to a bowl or individual glasses like I did.

Almonds slivered for garnishing
Almonds & Cardamoms

Garnish with almond slivers and red grape.

Serve the Apple Kheer Recipe, warm in winter and chilled in summer.

Notes

You can grate the apples too but I like the crunch from the chopped pieces.

Nuts could be cashews, pistachios or walnuts.
