holi snack recipe | crispy aloo bonda with dosa batter

holi hai! try out this fusion dish – holi snack recipe | crispy aloo bonda with dosa batter a perfect snack instead of regular pakoras without besan or gram flour.it tastes delicious with the crispy crunchy outer made with the dosa batter and the potato masala is soft and spicy .you can say that these are the south indian version of the maharashtrian batata vada. just make a stuffing made of potatoes rolled into balls, then dipped in dosa batter then deep-fried. dosa batter is available ready too and in the south, dosa batter is made at home to last for 4 to 5 days. you can make uttapam, dosa, paniyaram, dosa sandwich or these yummilicious aloo bondas.

the potato masala is just what i make for masala dosa stuffing. mashed potatoes spiced with a hot tempering makes the bondas spicy and the outer is only crispy. it tastes so good and you will have your loved ones asking for more.

INGREDIENTS

4 large potatoes boiled and grated

2 cus dosa batter

1 large onion chopped

1 sprig coriander leaves

10 curry leaves

1 tsp cumin or jeera

½ tsp mustard seeds

1 tsp chana dal

½ tsp red chilli powder

½ tsp turmeric powder

salt – as per taste

1 tbsp oil

oil – for deep frying

Potato Curry

METHOD

boil the potatoes and grate them. keep aside.

heat a pan and add the oil to it.

firstly add the chana dal then the cumin. once cumin splutters add the mustard seeds. then throw in the curry leaves.

now add the chopped onions and saute until they turn pink

add all the seasonings-red chilli powder, turmeric powder and salt.

next, add the grated or mashed potatoes and give it a quick stir.

finally, garnish with the coriander leaves.

remove from flame and set aside. after it cools down, make smooth medium sized balls out of this mixture and set aside.

heat oil in a frying pan for deep frying the bondas.

the oil needs to get just hot not smoky hot.

pour the dosa batter in a shallow bowl and add little salt and cumin to it.

see that the dosa batter is thick and not watery.

now dip the potato balls in the dosa batter and roll the ball gently in the batter to coat it evenly.

then slide the balls gently into the hot oil and fry until the bondas turn golden.

once done, transfer them on to a paper towel to drain off the excess oil.

crispy aloo bonda with dosa batter|holi snack is ready to be served. serve with coconut chutney, pudina tomato chutney or sauce of your choice.

Notes

1. the dosa batter should be thick.
2. don’t let the oil reach smoking point.
3. avoid the red chilli powder for kids and elders.

    Why only Holi, this recipe will be a hit the moment it is out from kadhai. Tried yesterday evening for my daughter. But trust me it was over within minutes by all family members.
    I had to promise it to make it today also as batter got over that time. So I’m ready to garner all the accolades from everyone while having the satisfaction that I’m serving healthy food to my loved ones instead of junk food. Loved the creativity of utilizing the dosa batter in a different way.
    Keep rolling out such recipes. It would be fun to relish them at this time of home quarantine for a long period.

      Thanks Fareha..feels so good to hear that the recipe was relished so well. You can make apple, uttapam with dosa batter. It is really very healthy as its not even fried and the taste is different and yummy..my Mexican kiddos and DIL loved the apple I served today for breakfast.I served appe with guacomole imagine 🙂
