these healthy grilled garlic potato wedges without butter are as good as potato fries. and actually good for you since they are not fried. these are lazy lockdown days and everyone wants something to munch on. potatoes, make a great snack. make these healthy grilled garlic potato wedges and watch them disappear in minutes. the fun part of cooking is you can innovate and experiment. especially when I am alone I try out different flavours as I am the guinea pig and I have no choice but eat what I cook or go hungry!

how to make grilled garlic potato wedges

just parboil the potatoes .see that they are soft and creamy on the inside and crunchy on the outside. grilling also takes less time this way. i love enhancing food with a delicate flavour. so i added mixed herbs and minced garlic to give them a flavorful punch.  served the healthy grilled garlicky potato wedges without butter. albeit in style on the new platter my friend kalpana gifted me. the fancy silver fork is my treasure from my bhutan sojourn

INGREDIENTS

6 medium-sized potatoes

salt, pepper to taste

5-6 garlic pods crushed

or

1 tsp garlic powder

1tsp mixed herbs (thyme, basil, oregano)

METHOD

firstly, wash the potatoes thoroughly and parboil in a medium pot. do not over boil. as you want your potato wedges to retain their shape and not crumble.

once done cool and peel the potatoes. chop into even-sized wedges.

consequently, take a bowl, add the potatoes and season with salt, pepper, mixed herbs.

crush the garlic and add to the potatoes and toss to smear the wedges with the seasoning

i minced the garlic in my hand mortar and pestle. it takes just 30 seconds to get a nice creamy paste.

meanwhile, preheat the grill to medium-high heat for about 10 minutes. place the potatoes on the grill rack. and roast for about 10 minutes each side.

finally, remove from oven and sprinkle some red chilli powder.this is for that final spicy kick. and to satisfy my strong spicy south indian palate!
