What is a Dosa?
South Indian breakfast is my favourite with Dosa, in particular, topping the list. Sweet Potato Stuffed Dosa is a recipe close to my heart although it was cooked on the spur of the moment. Dosa is a South Indian breakfast delicacy which has become a universal favourite. It is a savoury Indian pancake made with a batter of rice and lentils traditionally. This Dosa is usually stuffed with a tempered potato mash and served with coconut chutney and sambar. Dosa has always overpowered the paratha and is my choice regardless.
Sweet Potato for a Change
But then we all seek change. Have you eaten a sweet potato stuffed dosa? Well, that is what I did, tried out a sweet potato filling which was as tasty as or tastier than the traditional potato one. I love grilled or boiled sweet potato or even as a chat. I had sweet potato chat for dinner the other night and in the morning while I was mixing the batter for dosa, I remembered the boiled sweet potatoes in the fridge and on the spur of the moment concocted this sweet potato mash to be stuffed into my dosa. Like regular potatoes, it is easy to cook and blends well with most other ingredients.
Benefits of Sweet Potato
Sweet Potato has natural sugars which regulate blood sugar, it is nutritious and has anti-oxidant, anti-inflammatory properties. Naturally, it is a healthy choice for anyone. To tell you the truth I do not like mixing my savoury menu with anything sweet. I have never liked any sweet-sour dishes but as I am prone to experimenting I plunged right in and made this Sweet potato filling for my dosa.

- Add a spoonful of the sweet potato mixture in the centre. Fold one end over the other to close the dosa and transfer to a plate. Serve with chutney and sambar.
The dosa batter should be fermented overnight to make a really tasty dosa.
Sweet potato should be boiled just right or else the mixture would be too mushy and tasteless.
