About Curd Rice

Curd rice is copious in the south; known as Daddojanam in Andhra, this curd rice recipe is soft, mushy, and creamy and tempered with few spices. Moreover, Curd rice is a fundamental part of South Indian cuisine. All the four states in the south, partake curd rice every day to fight the heat.

Andhra Pradesh cuisine is apparently the spiciest of all Indian cuisine. Furthermore, Curd rice is my ultimate go-to meal, tempered generously garnished with pomegranate pearls. The creamy mouthful interspersed with the sweet bites of crunchy pomegranate is delicious.

In Andhra, Perugu Annam is the comfort food of babies and adults alike. Of course, there is no tempering for the babies but just plain curd and rice mixed and mashed together. It is a preferred meal as it sits light on the tummy, is easily digestible, cool, healthy and of course tasty. When the scorching summers are here, curd or yoghurt rice is the best to cool down the body. We have grown up on curd rice and our meal is not complete without it. This creamy, melt in the mouth, cold but fiery food is just what one needs in the tropics for lunch.

Overall, this Curd Rice recipe is the finest blend of hot southern spices and sweet-tangy flavours of plain yoghurt or curd. Loaded with the goodness of probiotic elements, the curd is a healthy ingredient to relish during summers.

Varying Ingredients

There are changeable ingredients in the basic Andhra Daddojanam recipe which is made with a basic tempering of mustard seeds, chana dal, green or dried red chillies, curry leaves with a sprig of fresh coriander. You can add a variety of veggies and fruits like chopped cucumber, grated carrot, sliced banana or mango, grapes or pomegranate. The curd added to this plain rice dish undoubtedly spikes up the quotient and makes it exotic.

Curd Rice is an anytime any time any day recipe that can be made at home daily or served at a party or even served as Naivedyam to the Gods. Curry leaves add a nice aroma and flavour to this curd rice recipe. If you have leftover rice and are too lazy to cook then curd rice is one pot meal that is perfect.

Curd Rice Accompaniments

When served with spicy pickles and crunchy papad it becomes a gourmet dish to be savoured and enjoyed. Plain cooked mushy white rice mixed with plain yoghurt and tempered Milk can be added to change the consistency to little light and you can let yourself creative by adding lot many things added to the plain curd rice.

  1. Cook the raw rice till soft and mushy. Remove from fire and with a ladle lightly mash the rice.

  2. Now add the warm milk and salt.Mix well and allow the rice to come to room temperature.
  3. Heat oil in a pan and add mustard seeds. Allow them to splutter. Add the Chana dal. Once the dal turns red add the red chillies.

  4. Lastly, add the curry leaves. Turn off heat. Immediately pour this tempering on the curd rice and mix
  5. Adjust the consistency of the curd rice according to taste. Keep it in the fridge for at least thirty minutes.

Recipe Notes
  • Cook the rice till it is soft. Hard-boiled rice for curd rice is not good.
  • If the curd rice is prepared well in advance and placed in the fridge it will become thick.
  • Add cold milk to the curd rice a few minutes before serving.
  • You can garnish with fruits of your choice like pomegranate, mangoes or grapes and even cucumber.
  • Never add curd to hot rice.
  • You can add a tablespoon of fresh cream and sugar to the hot rice for a creamier and sweeter texture.
