‘This post is part of BlogchtterA2Z2023′  and my first blog with the letter A. In India, all special occasions start with a sweet, here is mine. Apple crumble is a very English dessert. Did you know that when we spell stressed backwards, it becomes desserts? So when you are feeling the blues, a dose of sugar acts as a Kickstarter and uplifts the mood. Forget love, many would fall for chocolate any day !! The heavens have blessed us with early rain and the ground is being cooled by the pleasant showers. Perfect time for this warm Apple Crumble Pie Recipe that also warms the cockles of your heart.

Started Cooking at 12

I started cooking at 12, but it was just brewing tea or the regular dal-roti made at home. It was more to help mom than any culinary interest on my part.

When I was around 16 or 17, I attended cookery classes in Hyderabad. It was vacation time and, as usual, my cousins and I together had a ball. There was this sophisticated, elegant Ms Kapoor, in her chiffons and pearls, living in Banjara Hills, who was conducting cooking classes. They were frightfully expensive. I could afford to learn very few recipes, but each one that I learnt was a winner and still clearly etched in my mind.

Apple crumble was the first dessert that I learnt about in class. Brown sugar was synonymous with heroin, but then I learnt it was white sugar combined with molasses. I knew only Simla apples, but now I came to know that there were apples from the letter A to Z…..Adam’s apple to Zestar apple.

Tart Apples or Cooking Apples

Apple crumble needs tart apples or cooking apples. I carried home brown sugar from Hyderabad and tried it out twice. The aroma of freshly ground cinnamon mixed with apples and the tangy zest and juice of lemon together is intoxicating.

Close your eyes and put a spoonful of the pie in your mouth. The play of textures of the warm, crunchy, crumbly top and the stewed, mushy apples combined with the cold cream tickles the palate and the senses. And your heart will go mmmmmmmmmmmmmm.

Apple Crumble Pie Recipe

INGREDIENTS

6 tart apples or real firm regular apples

5 tbsp brown sugar

½ tsp grated lemon zest

2 tsp lemon juice

½ cup fine sugar

1 cup flour

6tbsp butter

1 tsp cinnamon powder

50gms walnuts crushed

50gms almonds or pecans crushed

50gm melted butter

2 tbsp crushed cornflakes or oatmeal

1 cup fresh whipped cream

METHOD for Apple Crumble Pie Recipe 

First, peel, core and slice apples. Take the lemon zest and juice and brown sugar. Mix well and keep aside.

Next, heat the oven to 150 degrees.

Now, rub the butter into the flour with both hands until you get the consistency of bread crumbs.

Add fine sugar, cinnamon powder, 2 tbsp of brown sugar, walnut and almond powder, crushed cornflakes or oatmeal and mix well.

Mix well until all the ingredients are nice and evenly crumbly to the touch.

Afterwards, line an oven dish with the apples mixed with lemon zest, juice and brown sugar. Pour the crumble mixture over the apples and press down.

Now, bake at 150 degrees for 30 mins and see that the crust is nice and golden brown.

Insert a skewer and check if the apples are just cooked and have not gone completely soft.

Finally, remove from oven and serve hot with fresh whipped cream, ice cream or custard.
