A classic Russian recipe, this Creamy Chicken Stroganoff has undergone a costume makeover; instead of beef, tender chicken in a creamy mushroom sauce. It is pouring outside and we all look for some comfort food, so I served this Creamy Chicken Stroganoff which was polished off within minutes.

Strips of tender seasoned chicken pieces sautéed with earthy mushrooms and garlic, cooked with chicken stock and smothered in a  healthy dose of fresh cream. Sounds, creamy, dreamy and absolutely delectable, doesn’t it?

This cosy, comforting Creamy Chicken Stroganoff is ready in Just 30 Minutes!

INGREDIENTS:

For The Chicken:

2 tbsp. olive oil, divided

500 gms boneless chicken

1 tsp. garlic powder

salt to taste

1  onion diced finely

1/2 tsp. ground black pepper

¼ tsp. red chilli powder or cayenne

For The Sauce:

½ onion, chopped

4 garlic cloves, chopped

2 cups chicken broth

4 tbsp. butter

4 tbsp. all-purpose flour

½ tsp. mixed herbs

salt to taste

¼  tsp. ground black pepper

½ cup cream, room

For Serving:

3 cups cooked rice

Freshly chopped coriander for garnish

cream for garnish

METHOD:

Notes

  1. You can include mushrooms.
  2. Use sour cream if available.
  3. You can use chicken with bone as well.

  1. Firstly, place the cut chicken into a bowl. Season with garlic powder, onion, salt, pepper. Marinate the chicken with all the spices. Spread evenly and pressure cook for 2 whistles.
  2. Now, transfer to another bowl; drain the broth and keep aside.
  3. Once the chicken is boiled, let it cool and shred it. (you can use boneless breast as well)
  4. Next, set a pan over medium heat. When hot, add the olive oil.
  5. Meanwhile, place the chicken in the hot pan and brown, about 2-5 minutes on each side.
  6. Subsequently, add the onion and garlic and stir occasionally until they are soft and translucent.
  7. Whisk continuously taking care not to burn. Slowly, add the chicken stock, stirring to create a smooth sauce. Add the mixed herbs, salt, pepper, and red chilli powder.
  8. Gradually, stir in the butter and flour. Bring to a simmer, reduce heat and allow the sauce to thicken about 5-8 minutes.
  9. Gradually whisk in the cream. Remove from the heat and serve Creamy Chicken Stroganoff with steamed rice.
  10. Finally, garnish with herbs and cream.
