Ingredients for Crispy Fried Amritsari Fish
- 500g white fish fillets, cut into chunks
- 6 garlic cloves, crushed
- 1-inch piece of ginger, crushed
- 2 tbsp lemon juice
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp ajwain seeds (carom seeds)
- ½ tsp black pepper powder
- 150g gram flour (besan)
- 2 tbsp rice flour
- 1 egg
- Oil for frying
- Salt to taste
Method
Marinate the Fish
Crush the garlic and ginger. In a bowl, blend them with lemon juice, cumin powder, coriander powder, ajwain seeds, black pepper, and salt.
Add a little water to make a thick paste. Toss the fish chunks in the marinade, ensuring an even coating.
Coat with Flour
Sift the gram flour and rice flour together. Sprinkle the mixture over the marinated fish.
Add the egg and mix until each fish piece is coated. Set aside for 15–30 minutes to allow the flavours to meld.
Fry the Fish
Heat oil in a deep pan until hot. Gently drop the marinated fish chunks into the oil. Fry for 2–3 minutes, flipping them until golden brown and crispy.
Drain the fish on a paper towel to remove excess oil.
Serve and Garnish
Serve the crispy fried Amritsari fish hot, garnished with onion rings and a sprinkle of chaat masala. Add a lemon wedge for an extra tangy kick. Pair it with a mint dip for a refreshing contrast.
