Easy Aloo Ki Sabzi: Stir-Fried Potatoes

Easy Aloo Ki Sabzi: Stir-Fried Potatoes, is a simple yet flavorful dish. Everyone loves potatoes, right? They are my all-time favourite vegetables. Yes, they are rich in carbohydrates, but when not fried like chips or French fries, potatoes are healthy. They provide protein, vitamin C, B vitamins, essential minerals, and complex carbohydrates.

The Versatility of Potatoes

Potatoes are incredibly versatile. You can cook them in multiple ways, like dry stir-fry, gravy, or mashed potatoes. Growing up, I was a picky eater, but my mom always tried to sneak potatoes into my meals. Whether in a sandwich, aloo paratha, or masala dosa, potatoes are always the star.

When you’re cooking for one, things can get boring. On days when I don’t feel like preparing an elaborate meal, I whip up a quick aloo ki sabzi. Today was one of those days. Potatoes are my ultimate comfort food.


A Unique Twist

What sets this aloo ki sabzi apart is its dry, spicy flavour. It combines a unique blend of North and South Indian spices, creating an aroma that is simply irresistible.

I often feel a deep connection between my North Indian roots and my South Indian upbringing. Growing up in South India, my food habits became a fusion of both cultures. My mom used to keep it simple with just cumin and fresh coriander. But when I make this dish, I add South Indian spices—mustard seeds, curry leaves, and green and red chillies; for an extra punch.


Ingredients for Easy Aloo Ki Sabzi: Stir-Fried Potatoes

  • 4 medium potatoes, boiled and cubed
  • 1 tbsp oil
  • ½ tsp cumin seeds
  • ½ tsp mustard seeds
  • ¼ tsp turmeric powder
  • ½ tsp red chilli powder
  • 2 dried red chilies
  • 1 slit green chilli
  • Salt to taste
  • Fresh coriander leaves for garnish

Method

Prepare the Potatoes

Peel the boiled potatoes and cut them into cubes. Set them aside.

Temper the Spices

Heat oil in a wok or pan. Add cumin seeds and mustard seeds, letting them splutter.
Add the slit green chilli and dried red chillies. Toss in fresh curry leaves, red chilli powder and turmeric powder. The aroma of the spices may cause sneezing, but it’s a sign the flavours are coming together perfectly!

Sauté the Potatoes

Add the cubed potatoes to the pan. Sprinkle salt to taste. Sauté the potatoes until they blend with the spicy tempering.
Toss them on high heat to achieve a crispy texture. Once done, remove from heat.

Garnish and Serve

Garnish the stir-fried potatoes with fresh coriander leaves. Serve hot with roti, pickle, and salad for a quick and satisfying meal.
You can even pair it with rice or stuff it into a sandwich!

Boil the potatoes in advance and store them in the refrigerator. This way, you can make this dish in no time whenever you crave a quick meal.
