Luscious Lychee Fool

This post is a part of the Blogchatter Half Marathon.’A Luscious Lychee Fool! Sounds interesting? God blessed summers with a fruity bounty, for sure. When you get lemons, you make lemonade and when you get lychees; you make an ambrosial dessert. I got Lychees, and I made Luscious Lychee Fool.

A Little About Lychees

Lychees look like bumpy strawberries and grow in dense clusters. The succulent and luscious pulp is white and translucent. Lychee fruits have one shiny, dark brown seed and the fruit has a sweet, subtle, distinct flavour and is delicious. The fruit is extremely juicy, and the juice keeps the body hydrated in summer. It is a rare perennial plant that survives for around 1,000 years in the wild. It is best eaten fresh or as fruit salads, in ice cream, jelly, jam, juice, and various beverages. Did you know Lychees are a symbol of love and romance in China?

Lychees do not grow here in the tropics and we hardly get them a couple of times at the supermarket. This is the reason I am not deft in peeling it but my husband was so adept at it. He would just pinch the top and press the bottom to get the lychee pop right into his mouth.

Easy Dessert that Looks and Tastes Exotic

I was going to make this pudding with ice apples but changed my mind at the last minute and used the same ingredients to make this Luscious Lychee Fool with china grass and no gelatine. It is more like a souffle but without the gelatine.

Recipe for Luscious Lychee Fool

200gms Lychee

500 ml Milk

1cup sugar or to your taste

10gm China Grass / Agar Agar

1 ½ cup Water

Strawberry or Raspberry Essence few drops

Garnish with cherries or nuts or fruit of your choice

Lychee pittted and pureed

Method:

Firstly, soak the china grass in a cup of water and set it aside for 10 minutes.

Peel and Pit the Lychees and make a puree in the blender.

Subsequently, peel over a bowl so that you can catch the dripping juice. You can keep a few chopped pieces if you want chunks in your dessert.

Later, take the soaked china grass in a pan and boil it till it has melted into a smooth paste.

Next, boil the milk in a pan until it is reduced and thickened. Add sugar, and turn off the gas.

More Instructions

Now, set aside to cool a bit. Add the china grass mixture to the milk and stir well.

After that, add the pureed and chopped lychees. Add a few drops of strawberry or raspberry essence to give a pretty pink colour.

Afterwards, take a mould and rinse it with clean water. Now pour the prepared custard and chill in the freezer for one hour or until set.

Latterly, remove and cover with foil and cool in the refrigerator. You can even set in individual ramekins.

When you want to serve this Luscious Lychee Fool just turn over onto a serviette or platter gently and unmould. It slips out easily.

Finally, put one spoonful in your mouth and feel the lychees cooling your parched throat.

Note: How to Peel and Pit a Lychee-

You can cut open a Lychee with your fingers or with a short knife.

Insert the knife or your nail under the stem where there is a nub. Pull the nub out and peel the lychee.

If you are just eating it then pop it in your mouth and nibble away the juicy flesh. I

f you are using the lychee for a shake or dessert then make a cut in the white portion and slice it apart to remove the seed.

A very thin, brownish layer remains on the fruit from the seed. Don’t try to remove this as it’s very soft and if you try to remove it, you’ll lose most of the juice in the process. Slice or cut as desired.

    Thank u so much Shyama…i use sheets only….it keeps the flavour of the lychees so natural…the brown specks are from the top of the lychee.
