Shahi Paneer Pudding Recipe
Doesn’t the name sound rich and regal? Presenting this Shahi Paneer Pudding Recipe with great élan. If you live in North India you’ve probably had your fill of Paneer. Paneer is classically made into curries, gravies, koftas, pakoda, kebabs, stuffed in parathas and what not. I decided to make a dessert to show that Paneer can be versatile. Yes, chenna is paneer, rossogulla or rasmalai but that is cow’s milk. This is a regular buffalo milk paneer I make at home. This spongy, fresh cottage cheese is rich, tasty, and a vegetarian’s best friend.
Making Paneer at Home
I have always seen my mom making fresh Paneer made by adding lemon juice or vinegar to hot milk to separate the curds from the whey. She would strain the curd in a muslin cloth and pressed it down firmly into a block by placing the marble rolling board over it to then cut into cubes. Here is How to make Paneer at home. Extended family in Delhi sprinkles cubes of paneer on any and every dish. While my late Sister-in-law had cravings of fresh Paneer when she was pregnant. She would sprinkle sugar over the warm Paneer and gobble it up.
Shahi Paneer Pudding Recipe
Puddings or desserts in India have a rich flavour to them and this Shahi Paneer Pudding Recipe is no less. It’s not a difficult task. Boil milk, let it simmer for some time to thicken, add cream or condensed milk once cool. Grate Paneer and stew it in sugar syrup till nice and thick and add it to the creamy milk. Once it is nice and thick, serve in individual bowls and garnish with different ingredients. I used choco-chips, cocoa powder, sprinkles and almonds

Ingredients for Shahi Paneer Pudding Recipe
1 litre Milk
150 gms grated Paneer
1 cup of sugar
1 cup of water
½ cup fresh cream or condensed milk
2 tbsp custard powder
1 tsp vanilla extract
1 tsp choco chips
10 almonds
2 tbsp cocoa powder
1 tsp sprinkles
Method for the Pudding
Firstly, heat the milk. Let it simmer on low heat. Once thick, add fresh cream or condensed milk.
Adjacently, make a sugar syrup and once sugar has melted add the grated Paneer to the syrup. Let the Paneer cook in the syrup till it is thick and coats the spoon.
Now add the Paneer to the thick, creamy milk and keep stirring till the pudding becomes nice and thick. You can leave it as it is for an Indian style kheer or add 2 tbsps of custard powder to make it taste like an exotic dessert. Remove from fire.
Finally, add the vanilla essence.
Pour the ready paneer custard pudding into individual glasses, mason jars or serve in a bowl.
Garnish with almond slivers, cocoa powder, sprinkles, choco-chips or tuck in a tiny cube of Paneer for added flavour.
You can serve it warm or chilled according to weather and taste.

Paneer can be cubed
Add sugar according to taste and addition of condensed milk
Garnish with your choice of ingredients.
For an Indian flavour, add saffron strands, leave the custard.
