strawberry and pomegranate parfait | creamy crunchy delicious

a creamy and delicious dessert, strawberry and pomegranate parfait is irresistible and easy to layer. i tried to keep it as simple as possible but added a healthy granola layer which i made myself. greek yoghurt is the new age cream and has made reaching out for a cup of dessert much more guilt-free.

for this strawberry and pomegranate parfait, i have used pomegranate pearls fresh from my garden, homemade yoghurt that i hung for a little while and a little cream. pre-sweetened yoghurt does not give the same taste. the combination has a very silky and creamy texture that really goes well with the crunchy granola. i made a strawberry and pomegranate sauce with palm jaggery and to give it a different twist, i added some maple syrup to it.

why do i use greek yoghurt?

greek yoghurt is considered a superfood partly because it provides more protein than regular yoghurt. a 170 gram serving of greek yoghurt has just as much protein as 85 grams of lean meat, which makes it a great alternative source of protein and i use it in desserts instead of cream which is fat.

you will love the different textures and layers; the creamy vanilla flavoured yoghurt, the sweet syrupy strawberry and pomegranate sauce topped with the crunchy and healthy granola layer.

INGREDIENTS

Ingredients

2 cups greek yoghurt or plain hung curd

3 tbsp fresh cream

3 tbsp castor sugar

1 tsp vanilla extract

for the sauce

8 strawberries

1 pomegranate

2 tbsp maple syrup

for the granola

1 cup of roasted assorted nuts of your choice

4 spoons of palm jaggery

METHOD

take the greek yoghurt in a bowl and add the fresh cream to it. add the castor sugar, vanilla extract and blend both together till you get a creamy consistency.

for the sauce

chop the strawberries and deseed the pomegranate.

take a pan and heat it. add the strawberries and pomegranate to make a thick sauce. keep stirring and add the maple syrup. once thick remove from fire and set aside. leave the pulpy fruit as it is instead of blending it.

for the granola

heat a pan and add the jaggery to it. you can use sugar if you like. let it melt nicely and add the roasted nuts to it and mix nicely. grease a bowl and pour the granola into it. let it cool. i used cashew, walnut, almonds, peanuts and melon seeds.

take two ice-cream glasses.

firstly, layer the bottom with the yoghurt mixture.

shake the glass to let the cream settle without any bubbles.

then gently spoon the pulpy sauce to make a fruity layer

Add a few slices of strawberry if you like

now for another layer of the cream.

top the pudding with the crushed granola and garnish with a strawberry and pomegranate pearls.

You can serve the dessert without the granola as well.

chill it in the refrigerator for a couple of hours.

your satiny smooth strawberry and pomegranate parfait with crunchy granola on top is ready.

Notes

it is a very flexible dessert. you can use cherries or strawberries.
you can use whipped cream instead of greek yoghurt.
use store-bought granola any nuts of your choice.
