Xtra Roasted Baby Potatoes & Mushroom Recipe

The X factor in cooking today- an easy-peasy recipe – Xtra Roasted Baby Potatoes & Mushroom Recipe for BlogchtterA2Z2023. Summer is here, and cooking in a hot kitchen is a punishment. I am missing my family and waiting for the time I will get to be in their midst. Here is an easy and quick, Xtra Roasted Baby Potatoes & Mushroom Recipe. Potatoes are a universal favourite and baby potatoes end up being finger-licked by everyone. I thought of making spicy Indian-style baby potatoes but then went with pan-fried potatoes with mushrooms and flavorful spices. I refrain from using excess butter or oil and compensate by adding flavorful spices to the potatoes, which makes them healthier and tastier.

We do not get very tiny potatoes, so I diced them into halves. These pan-fried baby potatoes are tender inside, and a crispy, crunchy layer surrounds their exterior. They are perfect as a main dish too for lunch or dinner. I served them with some garlic bread and they made for a sumptuous dinner. By the way, I am a big rice lover and I can eat these baby potatoes with steamed rice too.

It is very simple and easy to make and, like most of my recipes; it is a one-pan meal. I paired the potatoes with mushrooms and found that they complement each other.

Pan-fried Roasted Baby Potatoes .

Xtra Roasted Baby Potatoes & Mushroom Recipe

Ingredients:

500gms baby potatoes washed and left whole or diced into half

200 gm portobello mushrooms sliced or halved

8 garlic cloves, minced

2 tbsps. Olive oil

1 tbsp vinegar

Salt and pepper

1/4 tsp. red chilli flakes

1/2 tsp. mixed herbs (thyme, oregano, basil)

½ tsp red chilli powder (for us spicy Indians: p)

2 tbsp heavy whipping cream if serving for kids

Chives chopped for garnish

Fresh Coriander or parsley

Method:

First, heat the pan or skillet. Add the olive oil, garlic and potatoes.

Now, toss and roast with a lid for 10 minutes. Add the mushrooms, salt, pepper, chilli flakes, and mixed herbs and sauté until both potatoes and mushrooms are done.

Fork test the potatoes and check if they are tender. They should not be over or under-done.

Another method would be to mix all the ingredients in a skillet and roast them in the oven. But that would take longer.

The herbs and garlic aroma will tickle your nostrils and invade your senses. Pop one flavorful bomb in your mouth and feel the flavours of the pungent garlic, thyme, basil and oregano explode.

Last, check the potatoes and when they are done, sprinkle the spring onion and the parsley and serve your Pan-fried Roasted Baby Potatoes hot, straight from the pan or transfer to a serving bowl!

Finally, serve Xtra Roasted Baby Potatoes & Mushroom Recipe with toasted garlic bread. and rice or just eat them as they are.

    I will try this recipe because it has mushrooms in it. 😀 I like to try easy peasy recipes as I don’t like spending much time in the kitchen. It’s hard to get baby potatoes here so I will use the usual ones diced into pieces, hope that will work.
