Say hello to summer with these Watermelon Popsicles and other flavours. ice cream season! I am strangely not a very ice-cream person but Popsicles are just my thing. Isn’t it awesome that you can make healthy tasty popsicles at home? Summer heat in South India is forgiven for the rich juicy fruits it blesses us with. So here is How to Make Watermelon Popsicles

Watermelons here are bright scarlet red and very juicy can be eaten sliced too but a frozen Watermelon Popsicle cools you down and quenches your parched throat. It is the perfect sweet and chilled snack for the sultry summer days when one craves a cold treat.

On these hot summer days juice whatever fruit you have and pour it into Popsicle moulds. Kids have vacations and would love to cool off with these juicy beauties. Kids call them ice pops lollies, frooties but the taste is of an icy popsicle always.

How to Make Watermelon Popsicles

INGREDIENTS

4 cups of watermelon chunks

1 tbsp fresh lime juice

2 tbsp sugar optional

Few fresh mint leaves

How to Make Watermelon Popsicles

METHOD

Firstly, taste the watermelon and only then add the sugar. The lime juice adds a tartness and gives a zing to the watermelon.

Next, add the watermelon cubes and lime juice to a blender and pulse.

Now, strain the juice through a fine sieve into a bowl, pressing the fibrous bits with the back of a spoon to extract as much juice as you can.

Next, wet your Popsicle moulds and place the chopped mint leaves in each. Pour the juice gently into the moulds and freeze.

My popsicle mould caps have inserted sticks in them and are easy to unmould and hold and freeze until solid. If you are using Popsicle sticks, insert the sticks when the popsicles are slightly frozen.

My moulds come with a twisting cap and they come out just perfect. If your popsicles are stubborn then just dunk the moulds in hot water for a second to get them to release. They would slide out easily.
