As Ramadan has come to an end,  Eid Al-Fitr is being celebrated across the world with a host of traditional sweet treats and I made Recipe for Mango Jelly. Food is a staple of the Eid celebration, as families and friends come together to relish a sumptuous and divinely prepared feast in each other’s company. This Mango Jelly looks amazing and tastes delicious when served with fresh fruit.

Summer and Mango Jelly

When the summer arrives and the hot sun flashes its heat all over, I go crazy on a midsummer night but my heart sings with joy when the aroma of sweet mangoes fills the air. Diet needs to be forgotten in summer when you have mangoes in your hands. Mango is one seasonal fruit Indians one can never give a miss. Come summer and people get so creative in the kitchen with the addition of mango in every dish. It can quench your thirst in the form of juice and it tingles your taste buds as a chutney.

National Fruit- Mango

The main reason Indians love mangoes is that it is our National fruit. Hence it is our right to enjoy it during the season, isn’t it? Indians love mangoes because it is one fruit that is ubiquitous at every nook and corner in the city. You may buy this yummy fruit at different prices but the taste is always priceless. Mangoes are the king of all fruits because they fight cancer, alkalize the body, aid in weight loss, clear your skin, to regulate diabetes, help digestion, and make the perfect snack. I use mango as a body scrub by making a paste of mashed mango, milk and sugar or honey. The skin feels more tender and smooth after a rejuvenating scrub.

Children love jellies and making it at home is so easy. Recipe for mango jelly requires just 3 ingredients and water. Make a mango puree and add to agar-agar paste with sugar and set it in any mould. Your Mango jelly is ready to eat.

Recipe for Mango jelly

Ingredients

2 mangoes pureed

2 cups water

8 gms agar agar or china grass

5 tbsp sugar

1 cup fresh fruit

Method

Agar agar

Cut agar agar into small strips and soak in 1 cup water for 15 minutes. Take the soaked agar agar in a sauce pan, add 1 cup water to it and boil till smooth.

Add mango puree to the agar agar paste. Whisk it well till blended.

Now take your mould or any cake tin which I did and just rinse it once with water as it helps in unmoulding later.

Pour mango agar agar mixture into it. Let it cool and set, in the refrigerator for a couple of hours.

Cut and serve with fresh fruit.

Recipe Notes

You can even use any silicone cake moulds, chocolate moulds or even disposable bowls or glasses.

To quicken the process you can soak agar agar in water for 10mins then start cooking.

To unmould easily use a plastic mould or even disposable bowls or glasses.
