healthy beetroot pancake recipe | served with fruits and maple syrup

it’s valentine’s day and that means i can celebrate in pink or red, isn’t it? this healthy beetroot pancake recipe is my valentines tribute to my two grandsons, arian and amir, they fill my heart with joy. i’m smiling on valentine’s day because of them. though they are thousands of miles away, i don’t have to be able to see them to love them infinitely. g mas are like that.we have superpowers.

all kids love color and what can be better than healthy pink-coloured beetroot pancakes. beets have a mild flavor, and when you add beets to any food you boost the nutritional value while colouring your food a bright pink! i have made beetroot puris and raita and today i made pink beetroot pancakes.

soft, spongy and colorful, beetroot pancakes are a healthy breakfast option for kids and adults with fruits and a glass of milkshake. use half of flour and half of wheat, drizzle honey or maple syrup liberally for a yummy breakfast.

a friend brought me a jar of the original canadian maple syrup.

a quarter-cup of maple syrup is high in minerals

a 60 ml serving of maple syrup has 100 percent of your suggested daily allowance of manganese, as well at 37 percent of riboflavin, 18 percent of zinc, 7 percent of magnesium, and 5 percent of calcium and potassium. and above that, the antioxidant levels are comparable to a banana or a serving of broccoli.

INGREDIENTS

1 beetroot, peel and cut into chunks

½ cup flour

½ cups of whole wheat flour

½ tsp baking powder

4 tbsp palm jaggery or sugar

1 teaspoon butter

½ cup milk

1 whole egg

½ cup yoghurt

½ tsp salt

honey or maple syrup to drizzle

HOW TO MAKE HEALTHY BEETROOT PANCAKE RECIPE

firstly, wash the beetroot, peel the skin and cut into pieces.

boil the beetroot in a pressure cooker with 2 tablespoons of water and pressure cook for 3 to 4 whistles. turn off the heat and allow it to cool.

drain the water and allow it to cool. add the cooked beetroot to the mixer and extract into a smooth puree.

now add the wheat and plain flour, baking powder, egg, milk, curd, butter and jaggery. blend it all into a thick smooth batter.

add one teaspoon of vanilla extract for that awesome aroma.

pour the healthy beetroot pancake batter into a mixing bowl and set aside for 10 minutes. adjust the consistency to be neither too thick nor thin.

you can even pour the batter into a piping bottle and make your own artistic pancakes.

heat a pan or griddle and drizzle some butter, pour a ladle full of beetroot pancake batter and do not spread. cook on medium flame until bubbles form on top.

i made the pancakes in a heartshaped mould and also cut some with a cookie cutter.

now, carefully flip the beetroot pancake and cook till done. remove from pan and repeat for remaining batter.

once your healthy beetroot pancake recipe is ready, serve it warm.

finally, transfer the beetroot pancakes onto a serving plate, dust some powdered sugar and add fresh fruits. drizzle honey or maple juice liberally.

  3. honey can be used
  4. different fruits
  5. add sugar instead of jaggery
