Wholesome Chicken & Vegetable Stew

Can anything be more complete than this Wholesome Chicken & Vegetable Stew? A hot bowl of nourishing chicken vegetable stew can give a real kick start to your immunity.  Just clean ingredients which pack a pot load of flavour on a weekend night.

Chicken Stew is a delightful meal with chicken, onions, beans, cabbage and carrots. All simmered for a long time in a bountifully seasoned chicken broth until succulent. Today made this Wholesome Chicken & Vegetable Stew which has low carbs and is suited for the Keto diet.

Chicken & Vegetable Stew

This recipe is a wholesome meal in itself. Full of protein, healthy carbs and veggies. You can serve it with any bread to soak up the rich broth but I served it with steamed rice.

A really easy chicken stew recipe, it is packed with tender chicken and vegetables simmered together in the seasoned broth. Chicken or vegetable stock thickened with a spoonful of flour or corn starch gives it a wonderful consistency.

I am vegetarian and I generally have Veg Corn Soup whenever I get fresh corn. Another favourite is Tomato Carrot soup with toast or croutons. A recent favourite is Hot & Sour Soup.

INGREDIENTS

500 gms boneless chicken

2 tbsp whole-wheat flour

1 tsp black pepperpowder

1 tsp mixed herbs

2 tbsp butter

 1 tsp  oil

4 cloves garlic, minced

1 cup chicken stock or cube

1 capsicum diced

4 tbsp french beans,chopped

1 cup cauliflower

½ cup carrots, chopped

1 cup cabbage shredded

1/2 in cinnamon

1 bay leaves

1 black cardamom

METHOD

Firstly, heat butter and oil in a large pot on medium high. Add garlic till aromatic.Toss in the cinnamon, bayleaf and cardamom.

Next, add the carrots, beans, cauliflower and chopped capsicum. Add the shredded cabbage later as it cooks fast.

Toss the veggies till they are slightly cooked.

Now, add the cubed chicken and give a good mix. Add the salt and the mixed herbs.

Sauté the veggies and chicken well. Once the chicken is done, pour in water or broth. I added a chicken cube.

Consequently, cook some rice and keep aside.

Cover and simmer on medium high until the chicken and veggies are all done nicely.

Finally, add the flour slurry and freshly ground pepper. Cook for five minutes.

Wholesome Chicken & Vegetable Stew is ready to be served.

Take the rice in a bowl and pour ladleful of the nourishing, healthy and nutritious stew, liberally over it.

Ingredients

  • Next, add the carrots, beans, cauliflower and chopped capsicum. Add the shredded cabbage later as it cooks fast.
  • Toss the veggies till they are slightly cooked.
  • Now, add the cubed chicken and give a good mix. Add the salt and the mixed herbs.

Notes

1. Add or remove veggies of your choice.
2. Add chicken stock preferable.
3. You can add olive oil instead of butter.
4. Add some fresh cream on top.
