Easy Mushroom Garlic Fried Rice Recipe

Indo-Chinese Cuisine

For starters, let me tell you that I am a die-hard fan of Indo-Chinese food. I  relish the  Easy Mushroom Garlic Fried Rice I have whipped up for my lunch today. When you ask an Indian about their favourite food they would say Punjabi, Bengali, Kashmiri or South Indian. But I would say it is Chindian or Indo Chinese which has become a national favourite.

We Indians love to fry everything and we even fry the steamed recipes from across the border.  The greasier the better and spice it up with red chilli powder, green chillies and yes garam masala too. We have taken the adage,’ Hindi-Chini Bhai Bhai” rather literally I guess and adapted Chinese cuisine into our traditional Indian one.

Chinese History in India

Some dishes are not even there on the Chinese cuisine; Fried Rice with Manchurian, Chilli Chicken, Chowmein. Desi Chinese is not a product of this century but goes back a couple of centuries when some Chinese from the Hakka region settled in Kolkata. This “Chinese” spread all over north, south, east and west. We now have Chinese Bhel or Chinese fried Idli.

Indian Chinese is the Indian version of Chinese cooking procedures; a few seasonings with a distinctively Indian tadka. Our palate is used to more spice and most people eat vegetarian and we need our desi touch in everything to eat. Interestingly, Chinese food is the most prevalent foreign cuisine in India and pipped Italian or Thai to the post.

The difference between authentic Chinese and our fusion version of Chinese is remarkable. Chindian recipes are nowhere close to authentic Chinese recipes. Here in South  India, Chinese fried rice is served with onion raita!

Ingredients
  

  • Ingredients for Easy Mushroom Garlic Rice
  • 200 gms Mushrooms
  • 1 cup cooked rice
  • 1 tbsp olive oil
  • 4 cloves garlic smashed
  • 1 bunch spring onion or one small onion chopped fine.
  • 1/2 yellow pepper
  • 1/2 red pepper
  • 1/2 green pepper
  • 1/2 cup cabbage shredded
  • 1 tsp soya sauce
  • 1 tsp vinegar
  • 1 tsp Tomato sauce
  • 1 tsp Chilli sauce optional
  • 1/2 tsp pepper powder
  • salt to taste

Instructions
 

  • First of all, soak the rice for 15 minutes. Boil water and add the rice to it. Once the rice is 80% done, strain it and cool.

  • Heat a pan or wok and once heated add the oil and fry the garlic till you get the aroma.

  • Then toss in the spring onion whites or normal onion and sautĂ© till translucent.

  • Add the peppers and sautĂ© for a couple of minutes and then add all the mushrooms and stir-fry.

  • Add the chopped cabbage now so that it is nice and crunchy. When the mushroom and peppers are de cante add the sauces, vinegar, salt and sautĂ© well.

  • Finally, add the rice and mix gently.

  • Add the pepper now. Transfer to a serving dish then add the spring onion greens.

  • Serve this Easy Mushroom Garlic Fried Rice hot with or without a gravy.

Notes

When you boil rice see to it that they do not get soft.
Keep the rice and the veggies with a little bite in them.
A soggy fried rice is just not good to eat.

    Nice pictures, very colourful. Yes we all like and love to eat Chinese. But does a Chinese person from mainland China enjoy Chinese food created by an Indian? My personal experience suggest that Chinese like to eat a lot of meat, mostly boiled and they add some seasoning to make the food tasty. Japanese also do the same. They cannot digest, at least not initially, our spicy dishes. May be if we make them a convert to our Chinese cooking, China will not ask for Arunachal and give up Aksai Chin.
