Bottle Gourd/Lauki Recipe Andhra Style – Mashed, Sour & Tangy

Bottle Gourd/Lauki Recipe Andhra Style is for all those people like me who literally run away at the thought of eating Lauki. Despite its nutritional value, since childhood I tend to avoid it due to its insipid taste. The other day I was ill and my maid bought the groceries and served Lauki Bharta for lunch. I could not return it as there was nothing else to eat and I quietly ate it like a chastened kid. Surprisingly, it tasted exceptionally good and different. I am actually going to plant it in my garden.

Numerous Names

Lauki is known by different names in India; my mom used to call it lauki or gheeya. The Common name is Bottle Gourd,  calabash gourd, Kaippan Chura, in Telugu it is known as Sorakkaya, Marathi – Dudhi, Tamil- Surakkai, Malayalam-Pechura, Kannada- Sorekayi, Bengali -Ladu and Gujarati-Tumada.

Lauki Bharta Recipe

This Lauki Bharta or Bottle Gourd/Lauki Recipe Andhra Style is very easy and is ready in 15 minutes. It is a unique dish that is sour and tangy with the tomatoes and tamarind added to it. This is a delicious recipe and is perfect to serve in your everyday meals or for people with delicate tummies. You can serve it with rice or with roti.

Health Benefits of Lauki

Lauki (Bottle gourd) has a good amount of water content in it and is a healthy vegetable which should be a part of your regular diet. And because of the water content, it is good for weight loss as well. Did you know that Lauki is rich in calcium and magnesium? It decreases the blood pressure in the body.Lauki is a healthy vegetable and should be served in a tasty way. I particularly like the lauki halwa but not the raita.

Easy Cooking

Lauki Ka Bharta uses chopped bottle gourd/lauki pressure cooked with tomato, green chillies, salt turmeric, chilli powder and a little tamarind. It has to be coarsely blended in a mixer and tempered nicely. A totally different taste of the regular lauki ki sabzi made in our homes. It is a recipe typical of the neighbouring district and so strange that I never heard of it before. So, try it out and let me know if you liked it.

Bottle Gourd / Lauki Recipe Andhra Style

Ingredients for Bottle Gourd/Lauki Recipe Andhra Style

1 medium size Lauki chopped into chunks

2 Chopped green chilies

3-4 Chopped tomatoes

½ tsp. chilli powder

½ tsp. turmeric powder

1 tsp. tamarind paste or raw tamarind

Salt to Taste

Chopped coriander leaves for garnishing

½ Tsp. Cumin seeds/Jeera  

½ tsp. Mustard seeds/Rai

4 cloves garlic crushed

2 dry red chillies

1 sprig curry leaves

1 tbsp Oil

1 cup water

Method

Wash, peel and chop the lauki into chunks. Chop the tomato, and chillies.

In a cooker, add the chopped lauki, tomatoes, green chillies, salt, chilli powder and turmeric.

If the bottle gourd is super fresh then add only half a cup of water, otherwise one cup would do.

Pressure cook the lauki until 3-4 whistles. Turn off the gas and cool.

Transfer to a mixer and blitz coarsely.

Pour into a serving bowl.

Heat some oil in a pan and add the mustard seeds and cumin seeds to it. Once they splutter add the crushed garlic and the red chillies. Finally, add the curry leaves till they are crisp and turn off the flame.

Pour over the mashed lauki and garnish with chopped coriander leaves.

Recipe Notes

If you are cooking for seniors or kids avoid the tamarind.

You can blitz the lauki to a pulp if you like it smooth.
