Methi-Aloo Recipe & Leftover Sandwich

Methi, also known as fenugreek, is a staple in Punjabi households. It adds a unique flavour to many dishes and has health benefits. Here is my simple Methi-Aloo Recipe & Leftover Sandwich.

Why Methi is a Must-Have

Fenugreek leaves are more than just a flavorful ingredient. They help lower blood cholesterol, reduce the risk of heart disease, and control blood sugar levels. For diabetics, methi is a great addition to the diet. Chewing soaked methi seeds on an empty stomach may even aid in weight loss. Methi is versatile and it is used in dals, parathas, and curries.

Methi-Aloo: A Classic Punjabi Dish

This Methi-Aloo recipe is a family favourite. The combination of potatoes and fenugreek leaves is simple, yet flavorful. Potatoes, the king of vegetables, pair perfectly with the slightly bitter taste of methi. This dish is popular in winter when fresh fenugreek is in season.

Ingredients

  • 2 cups chopped methi leaves (fenugreek leaves)
  • 4 potatoes, diced
  • ½ tsp red chilli powder
  • ÂĽ tsp turmeric powder (optional)
  • 1 ½ tbsp oil (mustard oil preferred)
  • Salt to taste

Method for Methi-Aloo Recipe & Leftover Sandwich

  1. Prepare the Ingredients
    Wash the methi leaves thoroughly under running water. Peel and chop the potatoes into small cubes.
  2. Cook the Methi
    Heat oil in a kadhai or wok. Add the washed methi leaves and sauté until the water evaporates.
  3. Add Potatoes
    Once the methi is done, add the diced potatoes. Sauté well. Cook on low heat without covering the pot to avoid increasing the bitterness.
  4. Season and Finish
    When the potatoes are done, add salt and red chilli powder. Cook until the dish is dry and flavorful. Turn off the heat.

Serving Suggestions

Serve the methi-aloo with roti, flatbread, or steamed rice. For a lighter option, enjoy it with homemade yoghurt and fresh radish.

This methi-aloo dish is nutritious and should be a regular part of your menu. If you prefer, you can substitute potatoes with green peas to make methi-mutter.
