Chicken Kebab Step by Step Recipe
You will surely agree that a gorgeous platter of juicy kebabs makes for a great party appetiser. This Chicken Kebab Step by Step Recipe is the perfect hors d’oeuvres. The smoky, grilled aroma and melt-in-mouth chunks of meat can be addictive. I love these grilled skewered kebabs as they are fast and fabulous and relished by one and all.
Origin of Kebabs
It is said that kebabs, in reality, originated in Turkey when the soldiers grilled lumps of raw meat on their swords in the battlefield. Irrespective of this fact, it is known that they originated for sure in the Middle East. The word kebab is a derivative of the Arabic word ‘Cabob’ which means to burn or char. They have one of the most sought after grills around the world. Kebabs are made with minced meat marinated in thick yoghurt and mild spices. They are served as an appetizer with chutneys and dips. Lamb is the original meat used in kebabs, but now this dish has changed according to the country and includes beef, goat, chicken and other meat options. In India, kebab has been a symbol of lavishness and affluence and was served mostly in royal tables of kings and nawabs. Most of the celebrated kebabs like Galouti, Shaami and Kakori originated in the Royal kitchens. Customarily served in the Moghul courts, today it has converted into common street food.
Restaurant Style Chicken Kebab Step by Step Recipe
This rich, creamy and flavoursome Easy Chicken Kebab Recipe is my own creation. I like to keep experimenting with traditional recipes with a tweak here and a tweak there to get a change in flavour. I don’t even eat non-veg but I just cook with my instincts and I know that it tastes good only if the plates are wiped clean or from the shower of compliments.
How to make Chicken Kebab
This Easy Chicken Kebab Recipe is one of the best I have tried and I am sure you will like it too. I first rubbed some salt, pepper, ginger garlic paste and lemon juice on the boneless chicken pieces and set it aside. I then made a rich aromatic golden marinade with Greek yoghurt, mayonnaise, fresh cream, cumin, coriander, garam masala powder, roasted gram flour, a pinch of food colour, fresh coriander leaves, crushed Kasuri methi, turmeric, chilli powder and salt, mixed everything into a smooth homogenous paste. The previously marinated chicken pieces now swim in the incredible golden marinade for 4 hours.
Chicken Kebab Step by Step Recipe
Ingredients
500 gms boneless chicken pieces
2 cups Greek yoghurt
1 tsp. red chilli powder
Salt – to taste
1 tsp. cumin powder
4-5 tbsp. mayonnaise
1 tsp. garam masala powder
½ tsp. pepper powder
1 tbsp. lemon juice
1/2 tsp. turmeric powder
1 tbsp. ginger garlic paste
4 tbsp. fresh cream
1 tsp. crushed kasuri methi
1 tbsp. edible oil
1/4 tsp. red food colour
2 onions cut into cubes
1 green capsicum cut into cubes
½ red pepper cubed
2 tbsp. oil for shallow frying
½ yellow pepper cubed
Satay sticks/kebab sticks or wooden skewers
Lemon wedges
Freshly chopped coriander leaves
Onion rings
Spring onion greens
Method
Firstly, wash the boneless chicken and pat dry and place in a bowl.
Add salt to taste, red chilli powder, ginger garlic paste, pepper powder and juice of one lime. Smear the chicken pieces nicely and keep aside.
In another bigger bowl, add the Greek yoghurt, cumin, coriander, garam masala powder, Kasuri methi, turmeric, food colour, cream, fresh coriander, oil and make a smooth silky marinade.
Add the boneless chicken pieces and coat them nicely so that they drown in this rich marinade. Give a mix. Cover the marinated chicken and set aside for 4 hours.
Chop the onions, green capsicum, red and yellow peppers into cubes.
Take satay sticks and soak them for about 30 minutes before using in order to avoid burning.
Instead of grilling the chicken in the oven, I first pan fried them
How to grill the Chicken
Take a non-stick pan, add 2 tbsp. oil and heat it. Place the marinated chicken on the pan and grill till nicely roasted on all sides. Remove and set aside.
Preheat the oven at 100 degrees. In the remaining batter mix the peppers and onion. Take a satay stick and skewer the onion chicken and peppers alternately.
Skewer the rest of the chicken sticks in the same way.
Now place the skewers on a grilling rack. Turn the chicken tikka sticks and grill till nice and smoky.
Prepare a bed on the serving platter with fresh coriander or spring onion greens.
Place the skewers on the platter and garnish with onion rings and lemon wedges.
Sprinkle a mixture of salt, red chilli powder and pepper over the kebabs and serve hot with a coriander-mint chutney. Your Chicken Kebab Step by Step Recipe is ready to be devoured.
Vegetarians like me can make the same marinade for mushrooms, skewer them and grill them in the oven or on a pan.

- 5 number Satay sticks/kebab sticks or wooden skewers
- 2 half lemon
- 1 bunch Freshly chopped coriander leaves
- 1 small Onion cut into rings
- Few spring onion greens
