Easy Creamy Cheesy Chicken Kebab
This post is a part of Blogchatter Half Marathon. An immensely popular chicken starter in India, Easy Creamy Cheesy Chicken Kebab is mouthwatering and melt in the mouth tasty. Traditionally it is minced chicken combined with a whole number of spices patted into a round or elongated shape and then shallow fried or deep-fried. It is generally served with mint and cilantro dip, onion rings and lemon. But making it for my half Mexican family, I had to go easy on the spices. You can make them for starters or just as a weekend teatime snack and watch them disappear in a minute.
I tweaked the recipe and made this Easy Creamy Cheesy Chicken Kebab which turned out to be so yummy that my grandson kept asking for more. What pleasure it gives me to cook for my son and his little family and watch them relish everything I dish out.
I miss him with every breath I take. He was a better cook than I am.
Recipe for Easy Creamy Cheesy Chicken Kebab
INGREDIENTS
500gms of minced chicken
1 tbsp minced ginger
3 tbsp of fresh cream
1 tbsp minced garlic
3 tbsp of grated cheese of your choice
2 tbsp fresh chopped cilantro
1 tbsp coriander powder
Juice of 1 lemon
1 tbsp cumin powder
2 tbsp of cornflour or breadcrumbs
1 egg for binding
Salt to taste
Oil to shallow fry
METHOD
Firstly, In a mixing bowl take the minced chicken, add the coriander and cumin powder, minced ginger and garlic.
Next, add the grated cheese, cream, chopped cilantro, salt and mix well with a fork or with your hand. Now add the lemon juice and dust the cornflour for binding.
I was making these for my daughter in law and my grandsons. Hence I stayed away from strong spices but if you like it hot and spicy then add 1 tsp. red chilli powder and 2 chopped green chillies for some fire in your kebabs.
Heat a pan and drizzle some oil in it.
Make small flat and round patties and add to the heated oil. Touch a little oil on your palm so that the patties come off easily. Flip the patties once they are done on one side and then cook them till they are done all over. They cook fast so keep your eye on them.
Drain on a kitchen towel and serve hot with a dip or sauce of your choice. The kebabs vanished as I was frying them and my grandson kept asking for more….so heartwarming to cook for my loved ones.
I did not use any chillies so it’s good for toddlers as well as elders. The cream and cheese makes them soft and creamier and so drool-worthy and you can say they are malai kebabs actually that melt in your mouth.
