Easy Creamy Cheesy Chicken Kebab

An immensely popular chicken starter in India, Easy Creamy Cheesy Chicken Kebab is mouthwatering and melt in the mouth tasty. Traditionally it is minced chicken combined with a whole number of spices patted into a round or elongated shape and then shallow fried or deep fried.  It is generally served with mint and cilantro dip, onion rings and lemon. But then I am in Mexico and making it for my half Mexican family and I had to go easy on the spices. You can make them for starters or just  as a weekend teatime snack and watch them disappear in a minute.

I tweaked the recipe and made this Easy Creamy Cheesy Chicken Kebab which turned out to be so yummy that my grandson kept asking for more. What pleasure it gives me to cook for my son and his little family and watch them relish everything I dish out.

I have not been regular in my posts as I just became the proud Gma of my second grandson who was born on the 17th…mere do anmol rattan ek hai Amir doosra Arian..in typical Bollywood ishtyle  and they keep me on my toes! And please excuse me for the hurried pictures too.

Before I chase you away from my page with my Gma rants please check out the recipe.

Recipe for Easy Creamy Cheesy Chicken Kebab

500gms of minced chicken

1 tbsp minced ginger

1 tbsp minced garlic

3 tbsp of fresh cream

3 tbsp of grated cheese of your choice

2 tbsp fresh chopped cilantro

1 tbsp coriander powder

1 tbsp cumin powder

Juice of 1 lemon

1 egg for binding

2 tbsp of cornflour or breadcrumbs

Salt to taste

Oil to shallow fry

Method

In a mixing bowl take the minced chicken, add the coriander and cumin powder, minced ginger and garlic.

Add the grated cheese, cream, chopped cilantro, salt and mix well with a fork or with your hand. Now add the lemon juice and dust the corn flour for binding.

I was making these for my daughter in law who is a new mom and for my 3 year old grandson Arian hence I stayed away from strong spices but if you like it hot and spicy then add 1 tsp. red chili powder and 2 chopped green chilies for some fire in your kebabs.

Heat a pan and drizzle some oil in it.

Make small flat and round patties and add to the heated oil. Touch a little oil on your palm so that the patties come off easily.Flip the patties once they are done on one side and then cook them till they are done all over. They cook fast so keep your eye on them.

Drain on a kitchen towel and serve hot with a dip or sauce of your choice. The kebabs vanished as I was frying them and my grandson kept asking for more….so heartwarming to cook for my loved ones.

I did not use any chilies so it’s good for toddlers as well as elders. The cream and cheese makes them soft and creamier and so drool worthy and you can say they are malai kebabs actually that melt in your mouth.

You can feel the love too by trying out this Easy Creamy Cheesy Chicken Kebab recipe and spread some love.

My writing was limited to school essays and projects for my kids and out of the blue, my writing career began with writing articles for the magazine section of a reputed national newspaper. I rediscovered my best subject at school and began writing with gusto. I had a weekend column in the newspaper which was well appreciated. I started off writing about Interiors and Gardens and later diverse topics like Fashion, trends, food and events in the city. Juggling my time between various jobs down the years and my writing, I have written content for fliers, brochures for colleges, speeches, social media content and also website content. I love writing and I am open to writing on a plethora of topics. My blog has some interesting insights into my life and travels but now it is mainly a food blog as I am growing organic vegetables and cooking my own produce is very therapeutic. Read my blogs to know me better. I write from my heart and what I write is what I feel... I feel a feel, A funny feel A funny feel, feel I! If you feel the feel I feel You'll feel the same as I!!
