Desserts make me feel full of joy and this Fruity Nutty Caramel Pudding was just what the doctor ordered. Eat god feel good is my Mantra. What’s yours? Life is short, don’t say no to dessert and remember to lick the bowl. I have licked many a bowl and not at all guilty about it.

Every kitchen has a tale, and I feel that desserts are the fairy tales of the kitchen, and they are the happily ever after ending to your dinner. It has been ages since I made any dessert. Today, a young, cheeky friend of mine teased me with pictures of a creamy sinful cake she had made. Right away I made my way to the kitchen and whipped up a dessert with anything that was available.

Fruity Nutty Caramel Pudding

This Fruity Nutty Caramel Pudding has three variations. There is a caramel layer in one with a layer of cream and condensed milk, then crushed Oreos and topped with stewed fresh pineapple pieces, pomegranate pearls and caramelized nuts; it tasted divine and I was blissful after finishing it off.

Ingredients

Caramel Layer

1 tsp butter

1/2 cup sugar

Pinch Cinnamon Powder

4 walnuts, almonds to garnish

4 crushed Oreos

2 tbsp pomegranate pearls

Pineapple Layer

1 tsp butter/ghee

2 tbsp Sugar  

½ cup chopped, fresh pineapple

½ cup fresh cream

200 gms Condensed Milk

Method

The bottom layer is the caramel so let us start from there.

In a pan add 1 tsp butter and add the walnuts and almonds. Sauté till the nuts are crunchy and keep aside.Add a pinch of cinnamon powder to the sugar and add to the same pan. Heat the sugar and melt it on medium flame. Keep stirring the sugar continuously to lumps and burning. The cinnamon will give off an awesome aroma.

Once the sugar melts completely and changes to an amber colour, transfer it quickly to the serving bowl or into individual glasses as I did. I just swirled the caramel into the glasses. Or else the caramel will crystallize and not spread evenly.

Cream & Condensed Milk layer

Fresh whipped Cream
Condensed Milk

 Add the condensed milk to the cream and blend well. The cream needs to be refrigerated before mixing it with the condensed milk.

Pineapple layer –

Heat butter/ghee in a pan. Sauté the pineapple slices on medium flame till golden and the juice is dry. If you are using fresh pineapple slices then add two tablespoons sugar at first. Add more sugar if needed. Stew the pineapple slices and then dry up the juices. Add a pinch of cinnamon powder for heightened flavour.

For the Layering

Once the caramel is crystallized, pour the cream & condensed milk over the pineapple slices. Slowly the condensed milk will set. Refrigerate for an hour.

Crush Oreo biscuits and spread over the cream layer.

Stewed Pineapple over Oreos

Now spread the stewed pineapple slices over the crushed Oreos. In the centre garnish with pomegranate pearls and the fried nuts.

Different Flavours

You can make different flavours by interchanging the ingredients-without caramel bt with nuts, without nuts but with no oreos, etc.
