chicken is so versatile that it transforms into an array of appetising dishes from starters to the main course. this lush & creamy chicken sandwiches recipe is one of my specialities my forte is fusion cuisine as one can combine elements of different culinary traditions. chicken sandwiches too can be twisted and tweaked to suit your palate. sandwiches are popular all over the world and are known as a light meal. the chicken sandwich was a favourite of my husband and mine when we were eating chicken.

chicken is yummy in sandwich form when you stack bread slices with shredded chicken, mayo and pepper, isn’t it? like these lush & creamy chicken sandwiches.

how can one not like a creamy mayo chicken sandwich? if you are a big fan of cheese and grilled cheese sandwiches then that is the way to go for you. i am lactose intolerant and too much cheese makes me queasy so i always avoid it. the best part of this sandwich is that you can use any leftover chicken and the assembling takes few minutes and you have a scrumptious meal ready in a jiffy.

it’s quite filling even without the cheese and tempting enough to sink your teeth into it. it is said that chicken sandwich was introduced in the year 1964, the year i was born. no wonder i am partial to it.

recipe for lush & creamy chicken sandwiches

INGREDIENTS

6 brown bread slices or sandwich bread

1 cup chicken boiled and shredded

salt to taste

1 tsp black pepper powder

4 tbsp cream or greek yoghurt

2 tbsp cheese spread

3/4 cup mayonnaise

1tbsp tomato ketchup

1 sliced tomato

1 cucumber sliced

potato wafers

METHOD

take the shredded chicken in a bowl. add salt, pepper powder,  cheese spread, mayonnaise, cream and mix.(i used greek yoghurt)

you can even saute the chicken in a little olive oil.

take a bread slice. spread some chicken mix. place another slice over it. spread the chicken mix over the second slice of bread and cover it with another bread slice.

cut the edges of the bread if you like or just slice it in half diagonally. hold it down with toothpicks if it is wobbly.

prepare the remaining sandwiches in the same way. if you prefer grilled sandwiches then grill them.

your lush & creamy chicken sandwiches are ready.

serve with tomato slices, cucumber slices and potato wafers.

NOTES

  1. grill the sandwiches or serve plain
  2. add paprika, green chillies if you want it spicy
  3. add grated paneer for vegetarian sandwiches
