Pineapple Chicken Fried Rice
One-Pot Pineapple Chicken Fried Rice is quite an easy meal. Made with chicken, rice and pineapple. It’s a delightful combination of sweet and savoury flavours. This pineapple chicken stir-fry with is delicious as well as colourful. Fried rice fans will absolutely love this scrumptious pineapple fried rice.
Sweet & Savoury Pineapple Chicken Fried Rice
What is most distinct in this dish is that every bite has its own taste: sometimes you get a sweet-savoury combination of pineapple and chicken, at other times you taste the spicy flavour of the rice together with the contrasting texture of carrots and raisins. There is a little bit of prep required, like most Asian dishes. But the actual cooking time is quick and easy.
My DIL and grandsons have a sweet tooth and they loved this Pineapple Chicken Fried Rice. It could be a show stopper at a party.
Pineapple Chicken Fried Rice has chicken cubes, carrot, peas, pineapple chunks and rice. All cooked to perfection in a stir-fry pineapple sauce. The one-pot rice looks and tastes very exotic.

INGREDIENTS
500 gms boneless cubes
2 tbsp oil
1 tbsp ginger-garlic paste
2 small onion, diced
1 cup pineapple juice
1/2 tsp cumin seeds
1 tsp turmeric
1/2 cup diced carrots
1 tsp sugar
4 cups cooked long-grained rice
1/2 cup peas
1 cup chopped pineapple
2 Tablespoons soy sauce
1 tsp salt
½ tsp pepper
2 tbsp soaked raisins
Fresh coriander to garnish
METHOD
Firstly, in a medium bowl, toss the boiled cubed chicken with the soy sauce oil and season with salt and pepper.
Heat a large sauté pan or wok over medium heat and add the oil.
Add the ginger-garlic paste, then add the cumin seeds.
Next, add the onion and sauté until the onion softens.
Now, add the chicken and sauté for a couple of minutes.
Consequently, make a stir fry sauce with the pineapple juice, turmeric and sugar.
Subsequently, add this pineapple sauce to the chicken.
Once it dries, add the carrots and cook 1 more minute until they’ve softened slightly.
Stir in the peas and chopped pineapple.
Finally add cooked rice, salt and pepper. Stir to combine.
Garnish the Pineapple Chicken Fried Rice with the soaked raisins, coriander leaves and serve with a fruit yoghurt dip.
Notes
Serve the rice in a scooped-out pineapple
Add red chilli flakes if you want it spicy!
The rice should be cooked al dente.
Add fruits of your choice.
