No-cook, Just Mix and Chill for this Smooth, Creamy, Silky and Delectable Lychee Kulfi!

Having lived in South India, I always crave for Delhi’s street food. Especially the stick wali kulfi made in the metal moulds. Even the Roshan-di-Hatti kulfi with falooda in Karol Bagh-sigh! My mom used to make them at home for me.  She would make it the traditional way; whole milk that heated for hours on low heat so that the milk is reduced to almost 1/3 of its original quantity. But as you know me and my recipes; they have to be easy and fast to cook. I don’t have the patience to stand over a boiling pot of milk for hours. I know the purists will hate me for this, but I cannot help it.

So, here is my shortcut method using condensed milk and cream instead. I know you may order it on Swiggy during this “C” pandemic but it can never match with this homemade recipe for sure.

Quick and Easy Lychee Kulfi Recipe

This Quick and Easy Lychee Kulfi Recipe is so simple that even a kid can make it. Kulfi is Indian ice cream and usually served in clay cups. It is usually served in a tiny earthen pot. The best thing is, it’s not hard like a Popsicle, but very creamy and silky. You just have to pop it in the fridge to chill; no ice cream maker or churning after an hour. I made it only with three ingredients; lychee pulp, milkmaid and whipped fresh cream! Just blend all three and pour into moulds, sit back and let it freeze.

Shhhh….if you want to earn brownie points from your family members, don’t tell them the secret. Show them your sweaty brow and give a long sigh and serve this Quick and Easy Lychee Kulfi.

Quick and Easy Lychee Kulfi Recipe

INGREDIENTS

500 gms fresh lychees

½ can sweetened condensed milk

1 cup of fresh cream

Firstly, take fresh lychees; skin and destine them.

Put them in a blender and make a thick puree with tiny bits intact.

Secondly, whip the cream until it is nice and thick.

Take a large bowl and blend the condensed milk and cream with a hand whisk.

Pour in the pureed lychee and whisk till you get a homogenous texture.

Your Kulfi mixture is ready.

Pour into Popsicle or Kulfi moulds.

No worries if you do not have them. Use disposable cups or glasses which work very well. Add an ice cream stick and you are ready to go. Freeze for at least 6 hours or overnight.

To serve, just run the mould under water and gently pull out the kulfi with a twist of the stick.

Serve Quick and Easy Lychee Kulfi Recipe on the stick or chop and serve with fresh lychees!

Recipe Notes

You can add chopped bits of cashews+ almonds+ pistachios

This kulfi can be set in the traditional kulfi moulds or in a block as well.

Chop it before serving. You can add fresh lychees while serving.
