Versatile Lemon Garlic Chicken

My forte is “Jugaad” a Punjabi word for innovation. I named this recipe as Versatile Lemon Garlic Chicken as it lets me don my jugaadu avatar. It is also easy and ready in under 30 minutes with minimal prep! Boneless chicken in a light broth with lots of fresh kale from my garden. The cherry tomatoes are just that; the cherry on top. It is perfect with any kind of bread or roti to soak it up.

This Chicken is as easy and quicker version of my favourite Keto Pepper  Chicken. Just take some boneless chicken, a bunch of kale(replace with spinach or even fenugreek), and a warm, lemony broth, my favourite crushed garlic and pink onions, toss them, swirl them for a perfect dish.

Versatile Lemon Garlic Chicken

Season and char the chicken. Love the added color and texture after the chicken cooks…succulent, juicy and soft. Sauté the garlic and onion and toss in the chicken to the pot. If you are hard-pressed for time you can skip this and add the chicken at this point without charring separately. Pile on the rest of the ingredients; mixed herbs, kale, stock and chicken

This is a perfect jugaadu or versatile recipe – which means it’s an empty dish or kora kagaz you can fill in with whatever you have in the pantry

Heart shaped rotu

I love to indulge my grandsons so I made these hear shaped rotis for them,The best way to get them to finish their food.

INGREDIENTS

2 tbsp olive oil

500 gms boneless chicken

salt and pepper to taste

1 pink onion, diced

4 cloves garlic, minced

½   tsp mixed herbs

1 lemon juice

1 cup chicken stock

3 cups fresh kale, chopped

Firstly,season the  chicken  with salt and pepper.

Next, heat a pan and add canola oil.

Add the chicken thighs to the pan and sear until brown and done

Now, transfer chicken to a bowl. Add onion and garlic to the same pan. Sauté 1-2 minutes until the onion has softened.

Add the mixed herbs and another pinch of salt and pepper. Toss well.

Add the lemon juice, chicken stock, and kale to the pan. Toss to combine everything, making sure to scrape up the browned pieces from the bottom of the pan.

Saute the chicken well and let the liquids dry up.

Serve Versatile Lemon Garlic Chicken immediately with a slice of lemon. Serve with bread, naan, or roti of your choice to soak up the creamy broth.

Recipe Notes

1. Add 1-2 cups broccoli or cauliflower florets, carrots, potato, sweet potato.

2. To save extra time, you can skip searing the chicken.

3. For a thicker, creamier sauce, stir in a corn starch slurry

4. Add a dash of cream, just before serving.
