Cauliflower Rice Keto Chicken Biryani

Have you heard of rice less Biryani? Well, I am going to share the recipe of Cauliflower rice Keto Chicken Biryani with you.  I wouldn’t have attempted anything so unusual but then the daughter is on a keto diet and every day is a new learning experience for me!

What is the Keto diet? The ketogenic diet is a very low-carb, high-fat diet. It actually lowers blood sugar and insulin levels and shifts the body’s metabolism away from carbs and towards fat and ketones. It is good for diabetics too. A ketogenic diet helps you lose much more weight than a low-fat diet.This means you do not have to starve.

Most of the diets are based on western recipes and Indians try to eat those but the craving for desi khana is difficult to subdue. This Cauliflower rice Keto Chicken Biryani is from the Headbangers Kitchen

They have many keto recipes to choose from.

It is a no-guilt biryani time which will satisfy all your Biryani cravings. My daughter loves cauliflower in any form and she loved it as cauliflower rice. Those who cannot eat rice can enjoy this Cauliflower rice Keto Chicken Biryani

Recipe for Cauliflower rice Keto Chicken Biryani

Calories: 105

Carbs: 3

Fat: 16

Protein: 20

Fiber: 1

Makes 4 servings.

Ingredients

150gms skinless chicken cut curry style

100 grammes of cauliflower riced

1 Tbsp Ghee

25 Grams Yoghurt

1 Tbsp Coriander Paste

4-5 fresh mint leaves

1/4 Tsp Tumeric

1/4 Tsp Red Chilli Powder

1/4 Tsp Coriander Powder

1/4 Tsp Garam Masala

1/4 Tsp Cumin Powder

Juice of 1/4th lime

Salt to Taste

1/2 Tsp Ginger Garlic Paste

1/2 Onion Fried

Fresh Coriander

Pinch of Saffron

a few drops of Kewra (Optional plant.)

a few drops of Shahi Biryani liquid (Optional)

Melted butter

Marinated chickenCauliflower Rice Keto Chicken Biryani

Method

For cauliflower rice- Take half a cauliflower and cut till the florets. Then take a cheese grater and grate the cauliflower or if you have a chopper then pulse it. Check that the texture is crumbly and not a lumpy mass. Your cauliflower rice is ready to be used.

Fry the sliced onions and keep aside.

The recipe says to marinate the chicken overnight with 1 tbsp ghee, yoghurt, coriander paste, fresh mint leaves, salt, ginger garlic paste and all the spices. But I just marinated small pieces of chicken for 30 minutes.

Pour some ghee or unsalted butter into a pan or rice cooker that is my favourite
kitchen tool which is available here.You can sit back and relax while the rice cooker cooks many things without supervision. If you are cooking in a pan then see that it has a firm lid and is cooking on a really slow flame.

Layer the chicken and then the rice.

Top with the fried onions, saffron soaked in warm water, fresh mint and coriander.

Cook on a low flame for 20-25 minutes till the chicken is cooked through

Drizzle a tablespoon of ghee to up the flavour and the fat content

Your unique Cauliflower rice Keto Chicken Biryani is ready. My daughter wiped the bowl clean and said she really felt satisfied.
