Cheesy Minced Cauliflower Casserole

Cauliflower is a favourite of mine and inspires me to churn out exceptional recipes with it. The recipe I am sharing here of Cheesy Minced Cauliflower Casserole is extraordinary. Cauliflower is usually cooked whole or in florets. It is grated for a paratha but I wanted to explore and tried out Minced Cauliflower with peas and topped with eggs to give it an extra kick.

Veggie by Choice

Being a non-vegetarian since birth and then turning veggie by choice, I looked to alternatives for cooking tastier and nutritious vegetarian fare. My husband turned veggie along with me and he was a total foodie it was always a challenge to meet his high standards. I completely vouch for the saying that the way to a man’s heart is through his stomach!! It is proven true many times over.

Love is the secret ingredient

Cooking is no rocket science but the main ingredient “LOVE” should not be ignored. Where there is love there is a gourmet dish! All mothers cook with love thus the saying that nothing can beat “maa ke haath ka khana”.

What is this Cheesy Minced Cauliflower Casserole?

This Cheesy Minced Cauliflower Casserole is a unique recipe blending Indian spices cooked in a pot with Italian cheese bake. The Indian spices add flavour and aroma to the dish while the cream and cheese give it a silky smooth finish. The overall fusion is awesome and the blend results in a gourmet Masterchef presentation.

Ingredients:

1 Cauliflower grated

2 Green chillies

1 large onion chopped finely

4 tbsp cream

1 tbsp. ginger garlic paste

Bowl green peas

1 cup milk

Egg optional

2 tbsp cashew paste

4 tbsp grated Mozzarella

2 green cardamoms

4 cloves

1/2 piece cinnamon

Star anise flower

1 tsp. turmeric

1/2 tsp. red chilli powder

1 tbsp Kitchen’s Promise Garam masala

2 tbsp butter

Garlic Chives for garnishing

Garlic Bread as an accompaniment

Method:

Minced Cauliflower
Grated Cauliflower
Minced cauliflower tempering
Frying the masala

Wash and grate the cauliflower till the floweret area. Heat a wok or skillet and add butter. Once it is hot add all the whole masala (cloves, cinnamon, cardamom, anise flower), then add the ginger-garlic paste.

Once it is a little brown add the finely chopped onions and the green chillies. Sauté till the onions are a golden brown, and then add the peas and sauté a little.

Now add the grated cauliflower and let it simmer a bit. Now add the milk and let it cook till the milk dries up. Milk is crucial to this recipe as it helps in removing the typical cauliflower smell and gives a richer taste to the dish. Add the cream and cashew paste. Mix well.

Add the salt, turmeric, chilli powder and Garam masala and sauté till nicely golden.

Meanwhile, warm up the oven at 100 degrees.

Set the Oven to Bake

Transfer to a casserole and add the mozzarella. Bake until the top is nice and golden. This is not an au gratin thus does not have to be white. On top of this break the eggs and bake in the Oven or place a fried egg on it later. Place some thinly sliced cauliflower for that extra crunch. Brush some butter on them.  Sprinkle a little salt and pepper on the eggs.

Remove from oven and garnish the Cheesy Minced Cauliflower Casserole with the garlic chives which give off a wonderful aroma.

Instructions
