How to Make Chicken Fajitas
This is the 6th post for #BlogchatterA2Z 2021 powered by Blogchatter. F for fajitas In Rome do as the Romans do and that’s what I am doing! In Mexico cook Mexican. I learnt How to Make Chicken Fajitas. It is easy to assemble when you have less time and it is an exotic recipe. In Spanish, fajita or “faja” means a “belt” or “girdle” in English.
The fajita is a Tex-Mex food popular in the US. Fajitas has completely lost its original meaning and now has come to describe it as anything that is cooked and served rolled up in a flour tortilla. I made Chicken Fajitas with onion and green and red peppers. Tortillas are readymade and chicken breasts take just a few minutes to cook. So do the peppers and assembling takes a couple of minutes.
How to Make Chicken Fajitas
INGREDIENTS
200gms chicken breast
1 tbsp lime juice
2 tbsp olive oil
1 garlic clove, finely minced
1/4 teaspoon chilli powder
1⁄4 teaspoon cumin
1⁄2 teaspoon salt
1⁄4 teaspoon black pepper
1⁄4 teaspoon hot pepper flakes(optional)
3 flour tortillas
1 onion,
½ green pepper
½ red pepper
TOPPINGS
salsa
sour cream
shredded cheese
Method
Firstly, in a bowl, mix together 1 tablespoon olive oil, lime juice, garlic, chilli powder, cumin, hot pepper flakes, black pepper & salt. Now, add the chicken breast and stir to coat and marinate for 15 mins.
Subsequently, chop onions lengthwise and slice into strips, cut the peppers also into strips.
Next, in a large pan heat a tablespoon of olive oil. Add onions & peppers stirring for 3-4 minutes, until done.
After that, in another pan add olive oil and add the marinated chicken. Sear the chicken till done. It takes 5 minutes on high flame. Remove from the pan and add to the onion and peppers and stir for about one minute.
In winter we like to wrap ourselves warmly and even our Chicken Fajitas are happy when they are secured snugly inside a quilt…oops tortilla!
I took the easy way out and to serve Chicken Fajitas, spooned a portion of the chicken and pepper mixture down the centre of each tortilla. Warm it in the oven or over the skillet, top with your desired topping like cream or cheese or you can fold in the two sides and then fold the bottom to secure the fajita. Serve with Salsa.
