Easy Homemade Kulfi Recipe

H for Homemade for #BlogchatterA2Z. Easy Homemade Kulfi  Recipe or Indian Ice cream is a rich ice cream that is made with full-fat milk and the flavour is further enhanced with cardamom or saffron. Everyone loves ice cream, and I guess I am the weird freak who doesn’t. But I can never say no to our desi Kulfi. The hot and sultry days have begun and the desire for something cool and yummy is the need of the hour. Need a brain freeze, then reach out to a satiny smooth homemade Kulfi.

Homemade Kulfi

I prefer easy cooking and I opt for kulfi over mithai. Kulfi is an Indian frozen dessert there is no need to churn—it sets easily, it is thick and creamy, like frozen custard. Whenever I go to Delhi I make it a point to eat the Matka Kulfi but since the pandemic, there are no trips. Create the same magic in your kitchen. What better than Homemade Kulfi? This quintessential, creamy, traditional Indian ice cream goes back many centuries and has been passed down from the Mughal kitchens. Kulfi is conventionally prepared by evaporating full-fat milk by slow cooking and is stirred continuously to keep the milk from sticking to the bottom of the vessel where it could burn, until its quantity was reduced by a half, thus thickening it, increasing its density.

Matka Kulfi

Kulfi has a unique taste due to the blend of lactose and sugar during the lengthy cooking process. The reduced milk is thick rabri with a malai or creamy layer on top. In ancient times, this thick gooey mix was then frozen in tight sealed kulhars or clay cups that were drowned in ice mixed with rock salt to speed up the freezing process. They are all placed in a Matka or an earthen pot that keeps it naturally cool.

Crunchy pistachios, almonds, and ground cardamom are mixed with the thick simmered milk, creating an aromatic bouquet of yumminess. Traditionally, the custard is flavoured with saffron, but these days saffron is frighteningly expensive and not available easily. This is the recipe of the regular kulfi but kulfi has donned many attires. It’s the Mango season and Mango Kulfi is a must. Easy Homemade Kulfi Recipe

My basic recipe is very simple. Boil one litre of milk until it reduces to half the quantity and then I add the milkmaid, cardamom powder, and roughly ground cashews. Then I pour the mixture into popsicles or kulfi moulds. My mom used to use metal ones but now we must make do with plastic ones. Freeze the kulfi for at least time eight hours, freezing overnight is the best.

Although the usual way to serve it is with a simple garnish of nuts, Kulfi is served best with Falooda or sweetened vermicelli rice noodles with ice cream.

Once you have tasted the authentic Kulfi, you may never go back to eating regular ice cream again.

Recipe for Easy Homemade Kulfi Recipe

                   Kulfi Method

                   

INGREDIENTS

1-liter full-fat milk or semi-fat4 Cardamoms powdered

1 tin milkmaid or condensed milk

8 Pistachios or almonds roughly chopped or

6 Cashews roasted and ground roughly

METHOD

                   

                     

Firstly, heat milk in a heavy-bottomed pan and bring it to a boil. Allow the milk to simmer on medium flame till it reduces to half of its original quantity.

Cautiously, keep stirring in between or else the milk will burn.

At this point, add the tin of milkmaid or condensed milk, cardamom powder, and roughly chopped nuts.

Ensuing, that the mixture is blended well, stir well and simmer on medium flame. Keep stirring till it further reduces to one-third of its original quantity. It will have a rabdi like consistency and will be thick.

Next, remove from fire and allow to cool.

Rich & Creamy Kulfi

Afterwards, once cool, pour the mixture into Kulfi moulds. See that the lids are closed tight.

But you can put some ice cream sticks in the moulds. as I did.

Now, place the kulfi moulds in the deep freezer and allow them to set overnight or at least 7-8 hours.

Once the kulfi sets, dunk the kulfi mould in lukewarm water for a few secs. The kulfi will then slide out easily. Or warm the cone in your palms to extract the Kulfi easily.

The best way to cool down on a hot summer’s day is by downing a few kulfis, cooling your sweaty brow or parched throat.

If you do not have kulfi moulds, use popsicle ones, or just set them in a box and slice it.

    Oh how much I love these colorful Kulfi cones. In our childhood, maa used to buy them every year in summer and prepare kulfis in home. But gine are the days. Now we only have ice creams from market. But home made kulfi is love ❤
