easy hot & sour soup recipe | hot & sour soup recipe with step-by-step pictures and video

end of the winters and a wonderful way to say goodbye to blocked noses and chronic cough is this easy hot & sour soup recipe. a simple and easy way to get you breathing easy with fresh vegetables, sauces and a mountain of black pepper. my dinner four times this past week was this filling and comforting soup. you can add shredded chicken for the chicken lovers. one reason i love indo-chinese as it is spicy and full of flavours similar to my south indian palate. you can of course reduce the spice according to taste.

this soup is neither as thick as sweet corn soup nor as watery as clear soups. go easy on the cornflour slurry and serve the soup piping hot from the pan to the bowl. the vegetables need to be chopped finely. let me share my secret; i use my handy electric chopper to chop veggies for this soup or for fried rice.it reduces the chopping time by 80%!

Ingredients

1 tbsp olive oil

2 clove garlic, finely chopped

1-inch ginger, finely chopped

1 green chilli, finely chopped

2 tbsp pink onion, chopped

1 carrot, finely chopped

3 tbsp cabbage, finely chopped

2 tbsp beans, finely chopped

2 tbsp vinegar

4 cups of water

1 tsp hot & sweet sauce

1 tsp pepper powder

2 tbsp soy sauce

½ tsp brown

1 tsp chilli sauce

salt to taste

2 tbsp fresh garlic & onion chives

for cornflour slurry:

2 tbsp cornflour

ÂĽ cup of water

Hot & Sour Soup

method

firstly, take a pan and add the oil.

add the chopped garlic, ginger and chilli. sauté

now add the onion and stir fry until it turns pink.

add the carrot and beans. i had the sweet red carrots at home and used those. you can use orange ones.

carrot and beans are not boiled so chop them finely and sauté till cooked but al dente.

lastly, add the cabbage as it does not need much cooking time.

Cornflour slurry
Hot & Sour Soup

pour in the water, soy sauce, vinegar, sugar, chilli sauce and hot & sweet sauce.

furthermore, add the pepper powder, sugar and salt.

let it all boil for a couple of minutes.

meanwhile, prepare the cornflour slurry by mixing the cornflour in water.

gently pour the slurry into the soup and keep stirring to avoid lumps.

the soup will start thickening and then you can turn off the flame.

finally, for the garnish, add the fresh garlic and spring onion chives.

pour into a bowl and enjoy this easy hot & sour soup recipe piping hot.

Notes

1. adjust the chillies to make it less spicy
2. add shredded chicken for the non-veg lovers.
3. don’t add too much cornflour.
