Macaroni & Orange pasta salad
Since I started this series, I am getting more ideas and options; Macaroni & Orange pasta salad. Like this morning, I had a very light breakfast and my tummy started rumbling around 12 noon itself. I felt like eating something light and filling with a different taste. My pantry had some macaroni pasta. I wanted to eat it but was thinking of the added love handles from the white sauce and the cheese. I went ahead and boiled a cup of pasta and a half cup of boiled corn.

Yes, you must have guessed that I am biased towards peas and corn. It’s healthy, it’s tasty, and it’s easy and convenient to incorporate in any recipe. Oranges’ are aplenty in this season and the hawker who sold them to me, made me haggle for half an hour! Fruits are very good is what I hear, but I do not like too many fruits. I can tuck into a banana and oranges with a dash of black salt are really good. I used to like apples at one time but now seeing them dipped in wax and being injected with all sorts of chemicals, have put me off them.
Whenever I hear oranges, I remember the rhyme in school
Oranges and lemons, sold for a penny,
Oh, those schoolgirls are so many!
The grass is green and the rose is red,
Remember me when I am dead-dead-dead-dead-dead!
They are no longer sold for a penny!
And macaroni of course of Yankee-doodle
ad-dead-dead!

It is the same with Macaroni. Some things are just etched in your mind like
Yankee DoodleYankee Doodle went to town
A-riding on a pony
He stuck a feather in his hat
And called it Macaroni

I am digressing…back to my salad now. I decided to use the oranges and make Macaroni & Orange pasta salad.
Recipe for Macaroni & Orange pasta salad
INGREDIENTS
1 cup boiled pasta
½ cup boiled corn
1 carrot chopped finely
1 onion sliced finely
2 oranges
½ cup hung yoghurt.
Salt to taste
Pinch of Pepper
Few fresh basil leaves (dried will also do)
Oregano dried
METHOD
Firstly, boil the pasta and cool it. Steam the corn and keep aside.
Next, chop the carrot and onion. Peel the oranges. In a bowl, add the pasta, corn, carrot, onion, salt, pepper, oregano, basil and hung yoghurt,
Consequently, mix and toss gently.
Finally, squeeze half the orange juice over the salad and add the rest of the orange segments to the salad and serve.
The mild citrusy taste combined with the creamy yoghurt, infused with the herbs is heavenly. Â If you like this Macaroni & Orange pasta salad I have concocted, please leave a comment below.
