These days, Frankie or Kathi rolls are popular street food. Many people have taken a fancy to these healthy vegan wraps or indulgent cheese and meat rolls. Moms can give their fussy kids healthy food in a Frankie while on the move. Frankie is great for busy mornings, especially when rushing out the door.
Childhood Memories: The Original Paratha
As a kid, I was a fussy eater, and my mom was at her wit’s end to please my palate. I used to pick at my food, and she would say I ate like a sparrow! But my mom made these amazing parathas. A delightful cone made of wheat flour, salt, ajwain, and ghee, and filled with cream and sugar. I’m putting on pounds just thinking of that sinful wonder.
Homemade vs. Market Frankies
Vendors in the market often make Frankies with maida or refined flour roti (flatbread), which they pre-cook and keep ready. Homemade Frankie rolls, or roti made with whole wheat flour, are healthier. You can stuff them with fillings of your choice; basic potato and onion mixture, paneer (cottage cheese), or innovative options like Chinese-inspired fillings. Add healthy salad veggies, like carrots, cucumber, cabbage, and lettuce to boost the nutritional value. They’re often served with a refreshing mint-coriander dip.
Recipe for Paneer (Cottage Cheese) and Mushroom Stuffed Frankie
Ingredients:
For the Rotis (Flatbread)
- 1/2 cup whole wheat flour or plain flour
- Salt to taste
- Butter or ghee for frying
Ingredients For the Stuffing
- 1 1/2 tbsp oil or butter
- 1 tsp ginger-garlic paste
- 1 cup grated cottage cheese
- ½ cup mushrooms, chopped
- 1 medium-sized onion, chopped fine
- 1 tbsp tomato sauce
- 1 tsp green chilli sauce
- 1 slit green chilli
- 1 bunch spring onion, chopped
- 1 tbsp chopped coriander
- Salt to taste
- ½ shredded carrot
- ½ cucumber, thin slices
Method
For the Roti:
- Combine all the ingredients in a bowl and knead into a soft, pliable dough using enough water. Cover the dough with a wet muslin cloth and keep aside for 10 minutes.
- Divide the dough into 4 equal portions and roll into thin discs.
- Heat a Tava (griddle) and cook each roti lightly on a medium flame. Keep aside.
- If you have any leftover roti, you can use them to make Frankies.
For the Stuffing:
- Heat the oil or butter, add ginger-garlic paste, and sauté briefly.
- Add the chopped onion, and green chilli, and sauté until the onions turn pink.
- Add the grated cottage cheese or paneer and mix well. Sauté on a medium flame and add the tomato and chilli sauce.
- Add the spring onion and mix it to make a cohesive mass. Garnish with spring onion greens and coriander, and keep aside.
How to Assemble:
- Heat ½ tsp butter on a Tava (griddle) until both sides of the roti turn light brown.
- Place it on a paper towel or butter paper. Place the grated carrots, cucumber, and cottage cheese stuffing on one side of the roti and roll it up tightly.
- Add boiled eggs, you can add them to the paneer mixture.
- Serve with a tangy garlic sauce right away.
