Watermelon and Coconut milk Popsicles

I was waiting for summer to make fresh Watermelon and Coconut milk Popsicles and I’m so glad I finally did today! I remember my mom making them every summer with the limited means she had…..usually she made them with Roohafza or orange squash. Ah, those childhood memories of making licking the popsicle slowly so that it didn’t get over. These watermelons and Coconut milk Popsicles are amazing, if I may gloat myself! Such a cool and refreshing treat for summer! I love how effortless and healthy they are.

What is an ice pop?

An ice pop is a water-based frozen snack. It is also referred to as a Popsicle, freezer pop, ice lolly, ice block or icy pole. It is made by freezing flavoured liquid or fruit juice around a stick. Once the liquid freezes solid, the stick is used as a handle to hold the ice pop.

Fresh Fruit Popsicles-Watermelon and Coconut milk Popsicles

You wanna feel the freeze in this sweltering summer? Nothing better than a cold snack on a scorching day. They make a great summer treat, afternoon snack, or even breakfast (Yes, I can eat a Popsicle at breakfast during summer). These fresh fruit popsicles are a colourful and delicious way to stay cool this summer and if you don’t add sugar, you won’t have to feel guilty! They are amazingly gorgeous and they’re so easy to make. Get the kids to help you out and they will enjoy eating them more!y grandsons love them and we make a different flavour every day.

Aren’t they so fresh and summery and of course taste amazing too? A combination of summer flavours like watermelon and coconut is a great way to stay cool! Make your own flavours. Let your imagination run wild and create your own ice pops.

Summer Snacks

These delicious hot-weather snacks aren’t just for the kids; they are perfect for you and you and you! Store-bought ice pops contain artificial sweeteners, colours and preservatives but these are just pure, fresh fruit and juice.

If you do not have ice pop moulds you can use disposable cups. Pour the pop mix into each, cover with foil and insert pop stick through the centre of the cup.

Recipe for Watermelon and Coconut milk Popsicles

Ingredients for Popsicles

INGREDIENTS

3 cups chopped watermelon chunks

½ cup of coconut milk

1 tsp of choco chips

METHOD

Popsicle Moulds

Keep aside a few chunks of watermelon and puree the rest in a mixer. If the watermelon is not sweet, add a little sugar to taste. Strain the juice and keep aside.

For the coconut milk, peel half a coconut and cut into thin slices. Pour a little water and blend in the mixer. Strain it well in a sieve or a muslin cloth. Your coconut milk is ready.

Take the moulds and put in the watermelon chunks. Add the choco chips which would look like the seeds. Pour in the juice till almost the top. Leave a little space for the coconut milk.

Let it set for 20mins and pour in the coconut milk to fill the mould. Set in the freezer for a couple of hours.  I usually make mine in the evening and leave it in the freezer overnight to freeze.

My moulds come with a twisting cap and they come out just perfect. If your popsicles are stubborn then just dunk the moulds in hot water to get them to release. They would slide out easily.

These fresh fruit popsicles are an awesome summer indulgence! They make a super healthy anytime snack, especially if you are feeling listless and you need a little pick-me-up.

These watermelons and Coconut milk Popsicles look gorgeous, don’t they? So dazzlingly fresh looking! Yum Yum!
