Wash, peel and chop the lauki into chunks. Chop the tomato and chillies.
In a cooker, add the chopped lauki, tomatoes, green chillies, salt, chilli powder and turmeric.
If the bottle gourd is super fresh then add only half a cup of water, otherwise, one cup would do.
Pressure cook the lauki until 3-4 whistles. Turn off the gas and cool.
Transfer to a mixer and blitz coarsely.
Pour into a serving bowl.
Heat some oil in a pan and add the mustard seeds and cumin seeds to it. Once they splutter add the crushed garlic and the red chillies. Finally, add the curry leaves till they are crisp and turn off the flame.
Pour over the mashed lauki and garnish with chopped coriander leaves.
Delicious, sour, tangy and healthy ‘Lauki Ka Bharta’ is ready to be served with rice or roti.

If you are cooking for seniors or kids avoid the tamarind.
You can blitz the lauki to a pulp if you like it smooth.
